The cream turns out to be very stable, glossy. Perfect for decorating cakes and desserts.
Beat the proteins with sugar in a water bath until
the sugar is completely dissolved.
According to the principle of Swiss meringue, the amount of sugar should be twice the amount of protein.
ingredients:
120 g egg whites (approximately the egg whites of 4 medium-sized eggs)
240 g sugar (including a bag of vanilla sugar)
1/4 teaspoon citric acid
