Birthday Cake Cookie Recipe
Ingredients
3 cups all-purpose flour
3/4 tsp salt
2 tsp baking powder
1 cup (2 sticks) unsalted butter (softened)
1 ¼ cup granulated sugar
2 eggs (room temp)
2 tsp Cake Batter Flavoring from Olive Nation
¼ cup rainbow sprinkles “jimmies”
½ cup (1 stick) unsalted butter (softened)
8 oz block of Cream Cheese
1 Vanilla Bean from Olive Nation
4 cups confectioner’s sugar
¼ tsp salt
Directions
For the Cookies:
Preheat the oven to 350 degrees F.
Whisk together the all-purpose flour, salt and baking powder. Set aside.
In a mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light in color. About 2-3 minutes.
Add eggs and Cake Batter flavoring scraping the bowl after each addition.
Slowly begin adding the dry ingredients to the mixing bowl and mix until the ingredients are fully combined.
Add the sprinkles.
Use a 1/3 measuring cup to scoop out portions of cookie dough. Roll them into discs that are slightly smaller than your palm.
Bake for around 12 minutes. Do not over bake. If they are browning around the edges, that is too long.
Remove them from the oven and let them sit in the pan for 5 minutes to begin cooling and then move them to a wire rack to finish cooling.
For the Cream Cheese Frosting:
In a mixer fitted with the paddle attachment, mix the cream cheese and butter until smooth.
Scrape vanilla bean seeds out of a vanilla bean and add the seeds into the mixture.
Add salt and continue mixing.
Slowly begin adding the confectioner’s sugar to the mixture until combined. Scrape the sides of the bowl as needed.
Use a piping bag fitted with a number 12 piping tip to pipe back and forth lines across the cookies.
Finish them with more sprinkles on top.
