How did Singapore’s famous Katong laksa, a spicy noodle dish with a rich coconut broth, come about? Mr Ng Juat Swee, nicknamed ‘Janggut’, first learnt his Peranakan neighbours’ recipe and began serving it in the 1950s. Today, his take on the popular Southeast Asian dish has spawned several competing stalls, all claiming to serve the best laksa in the island city.
