According to the History Channel, Dave Thomas actually came up with the bucket. He was the franchisee and was stiffed out of his fair share by the suits that bought out Kentucky Fried Chicken from Harland Sanders, and then he went on to found Wendy’s.

Awesome exchange… although it’s a myth about the no seasoning.. the oldest recipe uses black Pepper, nutmeg, all spice, parsley, marinated or brined in wine vinegar with onions and bay leaf

@@eldictator1 That is a myth that Scotland invented it. That comes from a revisionist article in the Smithsonian magazine from the 1980s. This article was widely quoted but an examination of the contemporary sources and previous scholarship show it to be very flawed. Prior to that article, food authorities like James Beard, etc, all attributed the creation of Southern fried chicken to enslaved Black American cooks. Period. the Scottish recipes they cite do not handle the chicken the same way and involve wine in the batter, seasonings like nutmeg,etc. They are more akin to a fricasse recipe not a true fried chicken recipe. No true Southern fried chicken recipes involve wine like the Scottish recipes and the seasonings are different. There was also a frying tradition in Africa and the seasoning used in the South are similar to more African seasoning--salt, black pepper, white pepper, onions, etc. Also, the enslaved cooks did not work under close supervision of the white slaveowners and in some instances, the kitchens in the South were not in the main house so no, the Scottish mistress did NOT teach the Black cooks how to fry chicken. Also, please note that the none of the American recipes they cite predate chattel slavery in the US. Ie, they were recording recipes invented by their enslaved cooks. Also, please note that Harland Sanders supposedly also took his recipe from a Black cook. He added the pressure cooker to it to speed production. Similarly, celebrity chef Paula Deen had a Black cook working for her long time and when this lady left and made her own cookbook, the popular story was that Paula's restaurants food suffered. Why? because the real creator of the recipes was gone. This Fried chicken story is another example of people trying to erase Black history.

African Americans DID invent southern fried chicken. But, just as in all other instances involving African American/Black people, it seems people are more than willing to remove credit. Anyone with common sense can look at the cuisine of the Scots/Brits/Irish and see that Fried Chicken is out of place prior to the founding of the U.S. All sources start 40 years after black women are famous For having served the dish in the slave holding south. The dish was imported back to Scotland after it was created in the americas. Much like "Neapolitan" pizza was imported back to Italy in the 1920's! What's really at play here is...... That people without power are never allowed claim or credit for their creations because history is written by the Victor, not the victim. Now all you guys go ahead and please enjoy you fried chicken and bbq!! People suffered and died for it!
