In Mexico 🇲🇽 we usually call this, Swiss enchilada (enchilada Suiza) it's more common in corn flour but this ones seems to come out nicely 👌👌

Of all the food youtubers, you are the best at making videos that give me info I can actually use. I've tried way more of your recipes than any other food youtuber (those pierogis are gonna be a Christmas classic for me now). Just keep doing what you are doing! You're refreshing in your personality, not trying to do lame forced jokes or being overly extra or theatrical. You're fun and seem like an actually down to earth guy who just wants to help other folks make good food.

Basics with babish, Joshua, chef John, all good in their own right but you and Adam seem to stand alone. The problem lies only when you claim it's authentic when it's not...... Nobody's is stopping you from enjoying your Midwest mom tex-mex enchiladas..... As long as your not lying to yourself self or to others..... Thats the problem with Mexican restaurants in the US...... They claim they are authentic when they are not..... And the customers are gonna get a wrong sense/understanding of the culinary culture....

I've always called this style "enchiladas suizas". I grew up eating them as well. Ours were usually made with a cream-style sauce rather than a salsa verde.

I have never made or even had enchiladas before. Tonight I decided to give the suburban mom version a try, since it seems very accessible. In true suburban mom style I only had red peppers, leftover poached chicken and the halal cart white sauce replaced sour cream. Of course I couldn't get the right cheese and I could have used twice as much cilantro. But dear lord was it ever delicious. I can see why you would fight over leftovers. This one is definitely going into the weeknight repertoire. Thanks for the great content.

This was my favorite meal as a kid. Biggest differences between yours and my mom's: mom just used taco seasoning for the chicken, just like she did for her fajitas. Yours is probably better objectively, but her chicken was just fine with the pre-mix. Also her sauce was not a chile verde sauce, it was more of a cream sauce with diced (and pickled?) jalapenos mixed in, and it was fantastic. Cheese inside and on top was cheddar, also fantastic. Damn, I just realized I'm having a birthday dinner with my parents tonight; I should have asked my mom to make these again!

@@Sacto1654 Quite a few foods are in the "intangible cultural heritage" list, including North African couscous, Maltese flat sourdough, Singapore's hawker stalls, Neapolitan pizza, Arabic flatbread and coffee, kimchi, all of French and Mediterranean cuisine, etc. It would be an excellent list to form an around the world travel plan from.

While you're on your enchilada kick, I recommend looking into New Mexico-style stacked enchiladas (enchiladas montadas). They come together really fast, taste great, and are perfect for feeding lots of people really quickly.

Hey, I made these tonight. I've never had a "green" enchiladas that I have liked. However I love so much of the Mexican influenced food you make I wanted to try it. These are amazing. No KZitem chef puts out the content or recipes that come close to pleasing my palet the way you do. Maybe Kenji alt-lopez does too... Still I want to thank you for expanding my knowledge and appreciation for this type of food, where prior I thought tex-mex fast food was the flavors of Mexico. Love your stuff, keep it up. I have made these twice already and they are just delicious! I am pretty picky when it comes to Mexican style food and these are our new favorite. I did make a few small changes. I used boneless thighs and I grilled them on the BBQ. I also swapped out the Monterey Jack for more authentic Oaxaca as well as a little Cotija. One thing that I like about this recipe is that there are no tomatillo's in the green sauce (not a big fan of them). Great leftovers as well.

Some of the best burritos I've had after visiting and working in Mexico many times as well as travelling throughout the south and southwest US have always been from some random white lady who sets up a stand, small store, or food truck making burritos by the beach. Totally inauthentic in all the best ways possible.

My husband’s favorite type of enchiladas. I’ve never liked the red canned enchilada sauce. Don’t know how to make it. We get a very good green salsa from our grocery store. Green salsa really goes good with pork and chicken. It’s great on a taco.

I made these for dinner tonight. The fam enjoyed them a bit more than I did. I think I would have preferred chicken breast over thigh, or maybe a mix. They really were suburban-ass enchiladas. The garlic cumin lime chicken was pretty damn solid on its own, and the roasted peppers will start to live next to my pickled onions. Thanks for the video bro

If you want the sauce to have a more developed flavor you can roast the onion alongside the peppers. That way you get the rich and roasted flavor without adding an extra time-consuming step of cooking the sauce

We've been making a casserole style enchilada that we call "Enchiladasagna". Similar concept (though we will be adding this green sauce next time) except the tortillas are not rolled with the filling. Instead, the tortillas are laid flat, fillings on top, and layered just like a lasagna. It's a little less work/mess and comes out really great. Leftovers are awesome because you can just cut off what you want to eat.
