I think it's kind of misleading to allege that there isn't a risk in eating raw crab. I got some pretty severe food poisoning after eating gejang. This isn't to say that the risk is large or to not eat gejang, but you should keep in mind that there is always a risk.

im pretty sure shes talking about the parasites specifically in the raw crab. poor food prep is a risk for literally any time you go out yknow? i got awful food poisoning from an overcooked burger and alfredo (different occasions lol) do you know you got the food poisoning from a parasite from the crab or just a mess up on the preparation part? if you’re certain it was the crab then never mind this entire comment lol

This dish looks good for sure but you are misleading people. There are numerous credible sources saying that while soy sauce may have some antimicrobial properties, it cannot kill all bacteria and parasites that crabs may contain. The risk might not be huge but it is still there and it is important that people are well educated about it (especially if they are for example immunocompromised). If someone wants to take that risk then no problem but you make it sound like it is 100% safe and it's simply not true.

Most people don't get sick from utm many food organizations for industrial food places and restaurants pushing heavy quantities of food with much more chances for bacterial growth. These crabs are literally soaking in soy sauce. Most of the risk from seafood positing is with a toxic chemical released by the decaying crustaceans body and boiling does not get rid of this. There are multiple cultural ways of curing food and this has worked for the vast majority of people for centuries. Pork is far more likely to infect someone with a parasitic organism than marinated crab. I've been food safety certified and there is no way to completely get rid of the risk. However fresh well prepared seafood is as little risk as one gets. People literally shuck fresh oysters and will never get sick if they are properly prepared each time. How come this is accepted yet literally increasing the salinity to the proper ratio and suing fresh. eat has been a reliable preservation method for thousands of years.

@@bwingbwinggwiyomiI'm confused since English is not my first language. By 'tone deaf,' do you mean she's being insensitive to the struggles of the working class? I'm from a third-world country and I grew up poor, but I have tasted uni/sea urchin since it's basically free where I come from. I haven't had foie gras, but from what I've searched, it's not difficult to produce. Just raise ducks and feed them a high-energy diet, then you can produce foie gras. You don't have to force-feed them, just give them lots of food since they love to overeat. I'm basing this on my experience since I once raised ducks and chickens as pets and mistakenly overfed them. The chunkiest chicken even weighed 5 kg. What I'm trying to say is, maybe it's a regional thing? I'm sure foie gras or uni must be expensive when served in restaurants, but I like to think they're not exclusive to rich people.
