I think all the youtube chefs/cooks need to take a page from your book. Your filleting is so clean. Utilizing the entire fish, head included, is the highest respect one can give to what the ocean provided. It irks the hell out of me seeing all the other KZitemrs leaving chunks of meat on the carcass of the fish when filleting, almost like they are rushing through it, and just discards the entire thing. Definitely have great appreciation and respect to your approach.

This is probably going to sound a little weird to most but my favorite way to eat halibut is big bite sized chunks in a chowder. I grew up with that so it's probably why it's my top and halibut is easily one of my absolute favorite fish. Great job filleting btw.

California halibut are technically a founder, so they can have eyes on either side of their faces making them left or right sided fish

Taku that Chinese is my very favourite way to eat whole fish. Not large but say a bream, a small snapper, I've even done it with whiting. I love all the green onions, herbs and ginger and the hot oil just makes it complete. However I could watch you make sashimi and sushi all day long. Watching a professional like yourself is so interesting. I've been subscribed to you since you had less that a few thousand subscribers and I knew you would blow it out of the ball park with your increased subscribers. It's because you show foraging, fishing, cooking etc and it is all wonderful to watch. It does make my mouth water though. I love to make sushi, love Thai, Japanese anything but typical old fashioned Aussie food which is where I am from. Keep up the most excellent work my friend. Michelle

Checklist for a channel I’ll keep coming back to: 1) Guy knows how to fish 2) Pays homage to his Chinese brothas with a fish head with copious amounts of Ginger and green onion plus custom sauce! 3) Uses a Biolite when he camps 4) Knows how to use a damn knife in preparing the fish and chopping everything damn else! 5) Shows his GF he can prepare sushi and cholo dishes as if he’s from the barrio. 6) Made me watch 38 minutes and 23 seconds straight and took me out of the pandemic for a brief moment.

I would be scared to go for a halibut in such a small craft. When I was a young kid- more than a few score years back, we went halibut fishing off either La Push or Seiku (WA) with friends. The ones we caught were so heavy that they had to be shot before they were put into the boat. Well over 100+ lbs, as it took to full grown men to pull them into the boat. (For those of you who don't know, a large, live halibut can literally knock the bottom out of a wooden boat unless they are dead. They thrash around a lot if they are alive). Halibut is my second favorite fish. The first is Red Snapper. I am picturing you tying into a big one and it literally pulling your boat all over the place. On the big ones the cheeks are the most sought after in my area.

Any parasites you find can be removed with a knife tip; they form a tiny pocket in the fish flesh and come out with little effort. The vast majority of the parasites are usually anisakid nematodes, a kind of round worm, and usually they're only a centimeter or two long, and often coiled tightly in the fillet. Hold the fillet up to a light source and you can spot them for easy removal. They die quickly if cooked (extra protein!). If eating the fish raw like sashimi or sushi, you should try to take them out for aesthetics mostly. They usually pass through the human digestive tract causing no effect or harm. On rare occasions, one might try to attach to the intestinal wall and cause gastric pain, but the tiny worm will die in a matter of days because they are fish parasites, not suited to living or reproducing in humans. Hope that helps.

Tim L. PINE: wow thank you Tim! I saw recently that one of Taku’s friends Philosophy D, I think got sick from a parasite. This was helpful; no doubt, thank you. Also, I hear freezing certain fish for an amount of time helps as well. Also, I was looking for info regarding this for cook and uncooked.

Taku didn’t kill the halibuts but rather the halibuts chose to be killed and Cooked by taku himself , it was simply the halibuts choice.When I think you couldn’t out do the previous catch and cook you continuously prove me wrong .Bravo 👏 if you open a restaurant I’ll be there .

Love it, I didn't know halibut grew that big in CA, my home state. Always thought it was only in WA. But, having the ability to troll on a sandy bottom, that is amazing. When growing up in the summers in WA, I would catch flounder, fillet and put the all the bony parts in a crab pot for a few day. Pull up half a dozen Dungeness crabs for a feed. You should freeze and try that outside of the bay.

Watching you fillet that fish was super satisfying! Here's a tip btw, when you juice your limes and lemons, stick a fork in it and rotate the fork while you squeeze, it'll get ALL the juices out. WAY better than a hand-press juicer even. Loved all 3 ways too. ughhh cravingss.....

I'm from Washington state(now in Pennsylvania) and I loved catching salmon in the rivers(lost a 30+lb king) and fishing for big halibut is sooooo tiring, I caught my halibut up in Ucelet Bay(or however you spell it) in Vancouver B.C. when I was younger. Also caught salmon up there as well. Halibut is like reeling in a piece of plywood! I primarily fish for bass as a sport, but love the thrill of catching big salmon and halibut! Awesome videos! You're making me hungry!!

SOOOOOOOO COOOOOOL! Really good skill! Btw , We Chinese people rarely use dried chili peppers, especially Cantonese cuisine, when steaming fish. We only need scallions, ginger, and special soy sauce for steaming fish (some fish can use a little sugar to replace the effect of MSG) btww, 99.99% of the time, we don't use MSG to steam fish

Not sure if u like spicy food. You should try agua Chile. it’s pretty much same way. Just make salsa with red onion ,jalapeño ,cucumber and cilantro. Then dump everything and mix tougher Must eat with Mexican chips. You can catch fresh fish. I’m so jelly.

My dad used to fish for fluke or summer flounder in Barnegat Bay. He never caught much until his next door neighbor ,George, took him out and schooled him . My dad then explained when you feel that first tug, give’em slack and count five seconds: “one thousand one, one thousand two…….” And then set the hook . I caught the first and every subsequent hit that day.

Maybe look into a underwater action camera , I know philosopher D has one , but saw this online Olymbros Fishing Camera Underwater Portable Professional Waterproof Underwater HD Video Recorder Fish about $60 Remember a weaker leader line so you don’t loose the camera and test it on maybe a pier or small lake first . Split screen is always a plus for these type of video

Fantastic series of videos Taki ! Not to beat-you-up, but never try to "set the hook" on a halibut... they have very soft mouths Best technique is open the bail/loosen drag and let the halibut take the bait back to the bottom (it's "lair") and it will than gulp down the bait and bingo it's retrievable !
