The Ultimate homemade chicken broth
INGREDIENTS:
* 6 & 1/2 lbs chicken leg quarters
* 1 large ginger root, anoit 2 thumb sizes
* 1 large onion
* 3 large carrots
* 1 bulb garlic
* 8 celery sticks
* leftover fennel (optional)
* 1 bundle of parsley
* 1 sprig of rosemary
* 1 sprig of sage with about 6 leaves
* 5 sprigs of thyme
* 1 tbsp fennel seeds
* 1 tsp black pepper corns
* 1 tsp red pepper corns
* 1 tsp white pepper corns
* water (about 3 gallons)
* salt to taste
** combine all ingredients in a 21 qt stockpot, and cook for 2 hours, or until desired concentration is reached.**
** adjust amounts of ingredients to fit your stock pot size.**
