Men's Cooking - Paweł Horąży
Composition:
- 350 g of wheat flour type 550
- 300 g of inactive rye leaven
- 160 ml of warm water ❗️
- 8 g of fresh yeast
- 1 teaspoon of salt
- 1 tablespoon of olive oil
1. Mix the leaven with flour and water and set aside for 1 hour;
2. Make the yeast leaven, 60 g of flour and 50 ml of water, wait until the leaven rises (about 15 - 20 minutes), add it to the previous dough and mix;
3. Take the dough out onto the counter and knead it for a few minutes, put it in a bowl, cover it and leave it to rise for about 2 hours;
4. Remove from the bowl, knead lightly and place in a baking tin, cover and leave for about 1 hour;
5. Cut and bake in an oven preheated to 220°C for 40 minutes.
