As a born and raised Yankee, I had shrimp & grits for the first time years ago at a restaurant a Georgian buddy took me to down in Pensacola, FL. It was mind-blowingly good. I've since ordered it at a few restaurants across the South and have been let down every time. They ranged from mediocre to bland and bad. My wife has seen me disappointed by all those other restaurants and found a pretty damned good recipe. It's not quite as good as the one from that first restaurant, but better than I've had from any other place since. It's one of those dishes I get genuinely excited for on the rare occasions she decides to make it.

Lifting the skin away from the bird and either stuffing with aromatics or more seasoning really is a great way to produce some badass skin and even deeper flavor development. Great vid as always

Georgia native here, specifically the southeast. Shrimp 'n' grits is the staple and really marks the area. VERY coastal Georgia.

North Carolina here. The most obvious pick is barbecue, but since you've done plenty of that, another ubiquitous food to the coastal region, and VERY unique, is the "all the way" shrimp burger. A burger bun piled high with fried shrimp, hot sauce, and in NC "all the way" means with mustard, onions, coleslaw, and chili. Very unique and so good. 😊

Love it. I'd like to add another tip. Pop the thigh bone hip(?) connection. It's looks and feels like a little "T". Popping that connective tissue helps aid thorough cooking.

I applied Spatchcocking a chicken to my smoker decades ago. It is the best way to smoke chicken. It is moist, smokie and if you use a good rub with a good sauce it is delectable.

I'm from South Carolina and I would recommend a pulled pork sandwich with Carolina Gold BBQ sauce. The mustard based sauce is what makes it unique to SC. 2nd option: You could do Boiled Peanuts! That's pretty classic Carolina too.

SC here and I do declare, if you do shrimp and grits. I'll .... I get it. It's easy. It's classic. We actually don't have much going on for our state, LOL. One tip from my ole retired SC dad to you: Use a crockpot, throw in the peanuts and water, and a packet of "Crab Boil" - best boiled peanuts you'll ever eat, homemade in a day.

Great video! So glad this series returned. Being from the Lowcountry in South Carolina, I have to say that Alabama white "barbecue" sauce is really off putting to me. It just does not read as barbecue sauce to me. I personally prefer mustard and then vinegar/pepper based sauces. Can't wait for you to do South Carolina. Gonna take a guess and say you are gonna do shrimp and grits, but I recommend considering other staples here like Frogmore Stew(Lowcountry boil), Chicken bog, Gullah Red rice, and my favorite whole hog barbecue(look into James Beard award winning pit master Rodney Scott). Keep up the great work!

North Alabama here, just 45 minutes from Decatur where Big Bob Gibson's started the white sauced chicken thing. I like your version of the sauce better than BBG simply because it has more body to it. BBG sauce is still fantastic, but very runny. Your sauce looks like it sticks to the meat much better! Great job!!!

Wet brine your chicken with tender quick curing salt for at least 24 hours and then smoke it like you did that one. I literally just did the same thing with a spatchcock chicken and two bone-in breasts skin on. Cooked it hot and fast on my barbecue with lump charcoal at 400°. Skin was crispy and the meat was incredibly juicy
