Who likes yeast dough? Who likes yeast dough with pumpkin, because I do. It is this ingredient that keeps the cake fresh and moist for a long time. The recipe for this delicious braid of pumpkin yeast dough with cinnamon sugar is definitely one of my favorite autumn recipes and I highly recommend it.
Ingredients:
500 g of wheat flour
150 g pumpkin puree
pinch of salt
1 tablespoon of sugar
50 g melted butter
1 egg for brushing the dough
Solution:
170 ml of lukewarm milk
30 g of yeast
1 tablespoon of sugar
1 tablespoon of flour
Cinnamon filling:
80 g butter
100 g of brown sugar
1 tablespoon of cinnamon or to taste
Execution:
Make the leaven: In a glass, mix lukewarm milk with crushed yeast, sugar and a spoonful of flour. Set aside in a warm place for 15 minutes.
Pour half of the flour, a pinch of salt and pumpkin puree into a large bowl.
Start mixing everything by slowly adding the ready solution.
When the ingredients start to combine, gradually add the remaining flour, and when all the flour is gathered into a dough, add the melted and cooled butter. Knead the dough in the bowl for a while, then transfer the dough to the pastry board and knead it into a consistent and elastic dough.
Place the well-kneaded dough into a bowl, the bottom of which should be greased with butter or oil. Cover the bowl with a cloth and set aside in a warm place to rise.
When the dough has doubled in size, place it on the board and knead lightly.
Then roll it out to a thickness of 0.5 cm.
Spread butter on the rolled out dough and sprinkle with sugar and cinnamon.
Roll the cake into a roulade, connecting the edges well. Then cut the roulade in half lengthwise, leaving 2 cm from the edge. See the video.
Put the resulting halves together into a "braid", as shown in the video.
Glue the ends together and place them in a baking tray lined with parchment paper.
My mold measures 13 cm x 9 cm.
Cover the molds with foil and set aside in a warm place to rise again.
Before baking, brush the top of the cake with beaten egg.
Bake at 180 degrees C for about 30 minutes.
Cool the cake on a rack.
