So I've started the process of learning to make knives and i'm very early into this hobby and I try very hard to make sure that every knife I make I try something new and I do something different. This collection is what I'm slowly making my single steel 440c knife that I made to give to chefs at work to beat on has become one of my favorites because it holds an edge way longer then it should and i can "rub it on a plate" to bring the edge back as you said. Thank you for this video. it has inspired me to create some new gorgeous pieces.

I second that. I enjoy hearing about other’s people’s collection and kinds of knives and the stories behind them. I use to have a series of Wusthof and Victorinox knives, till one day back in 2010 I was like there has to be sharper knives than this. Now 140 plus knives later, I’m still on the hunt for that one Shigefusa or that Takamura Hana. The crown jewel of my collection is my Bob Kramer I received for winning a sales contest as a employee with Sur La Table. I received a call from Bob Kramer asking me what my dream knife was and 6 months later a FedEx package showed up at my place and it was even better than what I had imagined.

Any stainless steel Japanese knife will work well and be easy to maintain, but blades made from vg10 stainless steel tend to balance good edge retention with durability.

Well, you've got _some_ knives, and mostly quite nice. But I think if you really want to come off as a loony you're going to have to up your game. There's a young woman KZitemr who recently took her viewers through her collection. It's housed in a big tool chest and there must be about 150 knives in there, all high-end folders, many if not most in the $300 USD and up range. She's promised to do her fixed blades soon, btw. One can only imagine. Seriously though, that's a nice collection. I'm getting intrigued by the Moritakas. Don't have any myself, and on paper they don't stand out as all that special, but they seem to impress people and have a certain mystique. I'm becoming very curious why.
