The bottle is a kind of oil that is mostly used for hotpot. I don't know why the noodle tastes so blend. I suspect you ordered the wrong stuff... lol But that kid was very good. He was eager to practice what he learned from school. I am glad you met with him. I will check out the food there too when I get there next year. I have not been in China for over 20 years. I am definitely going to get the pancake you had. I will tell her she was on the film. LOL

A great video again. The oil (at 11:14) is called Sichuan pepper corn oil which is extracted from Sichuan pepper corns (usu. shortened as Sichuan pepper or Szechuan pepper). YOU HAD IT IN YOUR NOODLES YESTERDAY. Remember the mouth-numbing sensation? 🤣This oil is at least 10 times stronger due to the high concentration of the substance that makes your mouth prickle and feel numb. Enjoy your stay in Shanghai.

I have lived in Chongqing and Shenzhen both for a long time, in terms of food, the spicy beef noodle that you ate the first day was actually Chongqing beef noodles, if you like to eat spicy and strong-in-flavor food, Chongqing's barbecue, hot pot, are very good choices (if you want to eat hot pot, make sure to choose big popular restaurant, but for other food, those small restaurants with many local people eating in are normally very good, but be careful that in Chongqing it is easy to get confused with the road). But Shenzhen on the other hand, is a city where most people there come from all across China for working, so you can find many kinds of chinese food there, but usually they are not in the classical local taste anymore. I don't know much about Beijing, but it has a long history and with many local foods that is not spicy and more sweet in flavor (Peking duck for example). If you want to see some historical and cultural sights, there will be more in Beijing and Chongqing, but very little in Shenzhen.

Stevana, taste the food/noodle soup FIRST before adding anything available on the table. Don't have to add the szechuan pepper if it's too numbing. 😅 It's a common topping like soy sauce or chillie sauce here.

The terrible oil you put in your noodles is called 'sichuan pepper oil'. We normally only use a tiny drop in food🤣.And that sichuan pepper is a red or green pepper like spice widely used in spicy hotpot which will give your mouth a shock when you bite it ( filling like being anesthetized)

Again that bottle of oil is what you guys tasted on your first day in Shanghai, peppercorn. The oil is made out of peppercorn, named scholarly as Zanthoxylum Oil. The mouth tangling or numbing seasoning. For hot and spicy food style, it doesn't have to be only of the Sichuan version. Several other provinces all feature spiciness in every meal. But what is unique in the Sichuan style is its spicy plus mouth numbing taste. That is to say, it won't make it Sichuan style by only being spicy without mouth numbing. So the peppercorn, or its liquid version, the Zanthoxylum oil, or just say the peppercorn oil, is a must have for a genuine Sichuan menu. In addition to Sichuan, another province where people regularly have spicy plus mouth tangling cookings is the Guizhou Province, which is south to the Sichuan province, whose Chongqing you guys just went to. Speaking of Guizhou, the Guizhou Province is somewhere you guys might be interested in visiting next time when having a chance. The province is on the southwestern plateau region of China, full of highlands everywhere. It thus has become the exhibition stage of China's super infrastructure building power.
