Pickled sardines are an especially popular dish in Spain and Portugal. The sardine is an abundant fish on the coasts of the Iberian Peninsula, which is why it became a fundamental food in the diet of many coastal communities.
The pickling process involves marinating sardines in a mixture of vinegar, olive oil, garlic, bay leaf, and other herbs and spices. This combination not only preserves the fish, but also gives it a unique and delicious flavor.
For centuries, pickling sardines was an important way to preserve food for the winter or for long voyages at sea. Pickled sardines were stored in airtight jars, allowing them to stay fresh for weeks or even months.
