Persians mostly use lamb meat and kebab is no exception. The original recipe has about 70% minced lamb meat and 30% beef. And the more fattier lamb meat the better. Flank meat from lamb is the best one to use

You are so talented❤ Edit: sometimes ppl here add a little bit of sumac and lemon juice on kebab in serving as well Edit2: As much as I know, we don't use sugar or mayo. You may skip them. As a Turk, here is the biggest tip I can give. Use the fat from the tail and mix different meat types that can be beef or from a lamb.

Any type of grilled meat isn't "Koobideh" and claiming that grilled meat (kebab) in general only belongs to "Syria" is very dumb 😅 People started making kebabs with spices since +5000 years ago, there are just different methods of preparing it.😅

there's no such thing as chicken koobideh. we have Jooj/Joojeh (جوجه) which is chicken kebab, and then there's koobideh.

@@GameDevGeeksI’ve been to at least 5 Persian restaurants in U.K. that serve chicken koobideh, but I think you’re right it doesn’t really exist because I never see it on videos from Iran. Also I had a Persian ex girlfriend for 3 years and her and her family never made chicken koobideh. I think it’s probably come about in Persian restaurants in west to suit local tastes.

A small braizer can do the job. u can prepare everything in the house and then go for a picnic and grill kebab in nature. Or we would use the rooftop in the night I remember playing backgammon with my father and checking the skewers at the same time so it wouldn't burn :)

When I was in college, there was a Persian kebab place right in front of my school’s gate and because it was often one of the cheapest and tastiest options around, I was there probably 2-3 times a week for years. Haven’t thought about that place in a long time but because of this video I have, and am now 100% going to try to make this at home.

Saffron is an essential in every Persian dish :)))) That's why u gotta add hot water so u can get the most from a minimum amount.

And this person has copied this text from wiki pedia and has removed the word persian And has replyed it to every comment i think its a spam lol Specially kubideh is persian the term it self comes from the verb کوبیدن which i dont know the proper eng equivalent but its sth like the act of mashing the meat. sorry for my broken eng btw

Just a quick note, Iranians are very religious about using lamb instead of beef. So I'd say very traditional Koobideh is made with ground lamb.
