Ingredients
230 grams + 1 tablespoon butter, softened (at room temperature)
230 grams of sugar
5 yolks
1 tablespoon orange juice
1 teaspoon of orange essence
1 Teaspoon vanilla extract
230 grams + 3 tablespoons of flour without preparing
2 teaspoons ground cinnamon
2 teaspoons of baking powder
3 clear
100 grams of raisins
30 centimeter rectangular mold
Preparation
Beat 230 grams of butter until thick. Add, without stopping beating, the sugar and the yolks and continue beating for 10 minutes. Add the orange juice and the orange and vanilla essences and mix.
Sift 230 grams of flour with the cinnamon and baking powder. Incorporate them little by little and with enveloping movements to the previous mixture.
Dust the raisins with 2 tablespoons of flour and add them to the mixture.
Separately, beat the egg whites until stiff and incorporate them in batches into the preparation, mixing thoroughly.
Line a rectangular mold with parchment paper, grease it with a tablespoon of butter and flour it with a tablespoon of flour. Remove excess flour.
Pour the mixture into the prepared pan and bake at 180°C for about an hour. Let cool, unmold and serve.
Advice
You can fix the parchment paper at the base of the mold with a few dots of butter.
