Kousa Bil Laban is a much-loved dish across the whole Levant. Palestinians, Lebanese, Syrians and Jordanians all have their own versions and the common thread is a warming yogurt sauce. It's tangy, creamy, flavourful and so comforting, combine it with the stuffed courgettes and it's a meal that is hard to beat.

30g Butter
1 Medium Onion (200g)
1.5 Tsp Salt
1.5 Tsp Black Pepper
1/2 Tsp Boharat or Seven Spice
1/2 Tsp Allspice
1/2 Tsp Freshly Ground Nutmeg
1/4 Tsp Ground cardamom
15g Parsley
50g Pine nuts
2kg Small Courgettes/Zucchinis
Yoghurt sauce:
1kg Yoghurt
1000ml Ayran
40g Cornstarch
1.5 Tsp Salt
3 Cloves of Garlic
1 Tsp Dried Mint
