I thought lectins were destroyed when appropriately Pressure cooked such as in Pasteurised in cans at a store for resale? Also greatly reduced by soaking foods with lectins over night and changing the water 3-4 times? This is from memory. Thanks

Yes I thought lentils were ok in keto core as long as they are pressure cooked

Hi there! Pressure cooking is a fantastic way to reduce lectins in lectin-rich foods. We dive a little deeper into this topic over on our blog. You can read more about it here: gundrymd.com/pressure-cooking-healthy-kill-nutrients/. Thank you!

You can cook better with avocado oil. I use Olive oil for dressings and things served cold.

Thank you Dr Gundry. I cannot seem to find information on lectin content in flatbread made from homemade lentil- and chickpea flour. I bake mine in the oven at 200 degrees Celsius. Would that not take care of the lectins?

@@GundryMDYT Thank you for your reply. I read the list but not a word on baking bread with beans or legumes. His advice is to pressure cook soaked beans but that doesn't apply here.

I always appreciate your hard work on the lectin free program. It has worked for me and just like in everything in life theres always a price. But often , the higher the price the better what you are getting is. While my first week without gluten was a living nightmare, the results helped me remaining motivated because they were not only real, but also ‘ visible ‘ and ‘ growing ‘. Also, if you have that some recommendations are too ‘ strict ‘, there are no federal laws requiring you to force yourself into any lectin free diets out there not a gun pointed at the back of your head.
