Dough:
✔Wheat flour-220 g.
✔Butter (margarine) - 80 g.
✔Baking powder - 5 g.
✔Salt - 1/3 tsp.
✔Vanilla sugar/vanilla - to taste.
✔Yolks - 2 pcs.
✔Sugar - 30 g.
✔Yogurt or low-fat sour cream - 1 tbsp. l.
✔Cold water - 3-4 tbsp. l.
Filling:
✔Apricots - 600-650 g (unpeeled weight).
✔Sour cream - 100 g.
✔Milk - 50 ml.
✔ Condensed milk - 4 tbsp. spoons.
✔Squirrels - 2 pcs.
✔Corn starch - 30 g.
✔For top powder - a few almond petals (optional).
👉 The diameter of my baking dish is 22 cm.
🕒 Bake at 170°C for an average of 40-45 minutes. The exact baking time depends on your oven.
❗Notes ❗
✅Add a little water to the dough, depending on the quality of the flour, the thickness of the sour cream, the size of the yolks, you may need a little more or a little less water. Or, it may even not be needed at all. Shortbread dough should not be kneaded for long; as soon as it sticks together into a ball, it’s ready.
✅Sugar in the dough can be adjusted to your taste. My apricots were very sweet, so I didn’t put a lot of sugar in the dough.
✅You can exclude condensed milk by replacing it with thick cream or sour cream. In this case, we also exclude regular milk and also add sugar (100 g).
✅My apricots were very meaty (this variety), such apricots have more pectin, so I didn’t add starch to the filling. It is well stabilized in its pure form. If you have apricots or other juicier fruits, you should add starch to the filling.
✅This pie can be prepared with different fruits and berries.
✅Before cutting the pie, it must be completely cooled.
