Tunisian Rice with Meat in the Oven and Dried Fruits
Preheat the oven: to 170-180°C (275°F).
Prepare the meat: Make a few incisions in the meat to insert the garlic cloves (peeled and halved).
Prepare the marinade:
In a bowl, mix:
1 generous tablespoon of turmeric

1 teaspoon of tomato paste
1 teaspoon of paprika
Saffron (optional)
Ground thyme and rosemary
Black pepper
Salt
Lemon juice
Marinate the meat: Place the meat back into the tray, add fresh rosemary, thyme, and lemon. Cover with baking paper and aluminum foil, and cook in the center of the oven for at least 4 hours at a low temperature.
After two hours, remove the meat from the oven, take out the sauce that has been released, and put the meat back into the oven.
Cook the rice: Steam-cooked rice is tender and appetizing. You won't be able to get enough of it!
In a saucepan, add the rice, water, salt, 3 tablespoons of oil, and 1 teaspoon of turmeric. Cook for 5 minutes, then rinse with cold water.
Next, place your rice in the steamer basket and steam for 10 minutes.
Transfer the rice to a bowl, add the sauce from the meat, place it back into the pot, and finish cooking.
Prepare the garnish:
In a pan, add some oil, add the dried fruits, and sauté until they are golden, stirring occasionally.
Plating:
Place the rice on a serving dish, top with the meat, and decorate with dried fruits, parsley, lemon, and thyme.
