Ingredients:
5 cups flour
1 cup sugar
1 cup desiccated coconut
6 tsp baking powder
A pinch of salt
250g margarine or butter (cold)
2 eggs
1 cup Maas (fermented milk) or buttermilk
115g granadilla pulp or custard
2 tsp vanilla essence
Half the cap of yellow food coloring
Method:
1. Preheat the oven to 200°C and line a baking sheet with baking paper.
2. Mix the dry ingredients:
In a large bowl, combine the flour, sugar, desiccated coconut, baking powder, and salt.
3. Cut in the butter:
Cut the cold butter or margarine into small pieces and rub it into the dry ingredients using your fingers or a pastry cutter until the mixture resembles coarse crumbs.
4. Prepare the wet ingredients:
In a separate bowl, whisk together the eggs, Maas or buttermilk, granadilla pulp or custard, vanilla essence, and yellow food coloring.
5. Combine the wet and dry ingredients:
Gradually add the wet mixture to the dry ingredients in two batches, gently mixing to combine. Be careful not to overmix; you just want everything to come together into a dough.
6. Form the dough:
Lightly flour a clean surface, and turn the dough out onto it. Add a bit more flour to your hands and the dough to make it easier to handle. Fold all four sides of the dough into the middle, then turn it over and shape it into a log.
7. Roll out the dough:
Roll the dough out to a thickness of about 1 to 2 cm.
8. Cut and prepare for baking:
Using a cutter or knife, cut the dough into your desired scone shapes and place them on the prepared baking sheet.
9. Egg wash and bake:
Brush the tops of the scones with egg wash for a glossy finish. Bake for 15 to 25 minutes, or until the tops are golden brown and the scones are cooked through.
10. Cool and enjoy:
Let the scones cool slightly on a wire rack before serving.
