yeah. A common trend on kitchen nightmares is places with pages and pages of menus, so much variety that they can't possibly be cooking everything, and sure enough they aren't. Chef Mike getting a heck of a workout.

There's a Japanese restaurant I like here in Texas with a really big menu. I've had loads of their food, from tonkotsu ramen to sushi to curry, and it's all been top-tier at a good price. They clearly make it all there, too, best takoyaki in town - most places will just take frozen takoyaki, prepare it well and put some fish flakes on top, but these guys actually make it in-restaurant from scratch. They're an exception, but I know that when I go there, it's all going to be the best stuff in town.

@@nickstarlingch Considering it's Texas, I'd wager there isn't much Japanese culture. So having a larger menu with a full range of options will give a closer to authentic experience. You're quite lucky to have a fully flushed Japanese restaurant with takoyaki!

I love a restaurant that has the confidence to have like 1 thing on the menu. There’s a place near my house here in the states that is just chicken and thats it. Like, you order how much chicken you want, maybe a drink, and thats the only thing. They don’t do 10,000 different styles of prep, they don’t have a million different sauces, you don’t even get a choice of sides, just how much do you want. And there is ALWAYS a line! Do one thing perfectly rather than many things mediocre.

Small menus tend to actually be better. It means the food is fresher, as they only need a few items and not store stuff in the freeser (at least i the uk), and it also means that the few things have been perfected or they would not be in buissness.

I wouldn't say it's the sole reason lol. I've seen them all many times and there were way more factors causing them to fail than just big menus. That being said, it didn't help and was one of the factors.

Small menus are the best sign of quality usually If theres only 4 or so things on menu, you know that is the freshest, best thing possible, because they dont have to divide their attention across a million things

It's a soft boiled egg brined in soy, mirin and sake. Often called "hot spring egg". The brining colours the outside of the egg and adds extra flavour. I love them soooooo much.

Having made numerous trips to Japan I tell everyone the same thing: you can buy almost anything over there in your home country online. Spend all of your money on food during your trip. It's the one thing you can get delivered. Plan it out, wait in line, whatever it takes. It will be worth it.

Depends on what it is. Japan also REALLY loves its limited-run, regional, seasonal, Japan-only, blink-and-you-miss-it special goods in general. If you see something unique that you like, it’s better not to second guess buying it because chances are trying to buy it online will be scalper hell-if it’s available at all.

Usually on Kitchen Nightmares they have way more dishes on the menu than they can possibly put out with good standards. Ramsey typically chops it down to a few things that they can actually knock out and focus on. I'll bet this place is lovely. They seem to have a tiny menu with one thing that they make exceptionally well. Beautiful.

it can be upsetting if you come on a whim and you don’t like whats on the menu but don’t want to leave, or want an entree or desert or something, but im of the opinion that you should know the menu BEFORE you go in, so its never really a big issue for me 😅

Places that specialize in what they make are the ones that have tiny menus but THE best tasting food. It's when a place over-diversifies the menu that spread themselves too thin to the point they can't do even a single item great. Plus places that take pride in what they do know they are best off sticking to what they want, not what customers think they want.

The only authentic Japanese place in my town only has like 10 main dishes, with half of them being rice bowls with toppings, but they're all so good. They make the best soba I've ever had, which I'd eat every day. Smaller menus are the best, there's a high chance everything you order is going to be great!

Wow that is a healthy layer of cheese in the top there!!!!! Tbh I have never tried curry with cheese however all I do know is that half these restaurants only put a smidgen of cheese on and that's super dossapointing if you're going to put cheese on something then please make sure you layer it up with a few handfulls :') this looks really yummy and gooey and the chicken looks like it has been cooked perfectly plus the sauce looks Sooo richhh and chunky mmmh tasty

My parents used to do kitchen installation for restaurants and hotels, so they got around in the restaurant scene. They always explained to me that a small number of items with a lot of ingredient overlap tends to be a good sign in terms of restaurant quality. To offer a wide variety of dishes, you need to store ingredients longer, since you can't anticipate which ones will sell best on any given day. So chances are when the food is cooked, the ingredients are not very fresh anymore or are of lower quality but stay edible longer. Small menus allow the restaurant to stock only what they need very fresh, because they will always have a good idea what they'll need. Fewer main ingredients allow for investment in higher quality, since the budget isn't spread out as much. So if you find a restaurant like this, that specializes in only one dish or a handful of them? Chances are you'll get very high quality food there. Of course this is not a guarantee - some restaurants can afford to offer a fair variety at good quality, and some cook low quality meals even on a small menu. But in general, this can be a useful rule.

I think even Gordon Ramsey said during some kitchen nightmare episodes that the smaller the many in a small local restaurant the better it is. They actually focus on the food they make because of the limited selection.
