for anyone wondering, you want to wash the butter thoroughly to remove excess buttermilk, which spoils much faster than the actual butter. also the liquid left behind is buttermilk.

It is not the same as the “buttermilk” you get at the store. The buttermilk you buy is a thick, fermented milk product that is acidic. it is similar to kefir. The buttermilk left over from making butter is probably the original and “real” buttermilk but they are two entirely different products and will give you different results in cooking and baking.

Add some greek yogurt to the cream and let sit out at room temp covered for a few hours. Then whip with paddles right out if the freezer. It will whip faster and the fermented cream will have more depth of flavor and last longer (if you kneed and rinse until clear).

Margarin and butter are different things. Margarin is cheaper and everywhere and is made from vegetable fat. It's usually a bit yellower than actual butter, made from actual milk.

You can freeze it if it’s wrapped tightly in foil or waxed paper. Lasts longer. Or you can cook the butter and remove the solids to make ghee that lasts a very long time.

You're mistaken, you can see at the start that he uses 300ml of extra thick double cream. This is a British thing and not available in the US. It has 49% fat. In places like the US, heavy cream typically has 36% fat.

I've been making butter at home for some time now. The reason your butter is going bad fast is you did not wash the butter enough. I put the butter into a large mixing bowl and put cold water on it while squeezing and kneading the butter like dough. The water will become milky in color. Pour out the water and repeat until the water is clear after kneading the butter.

Truly. Washing the butter under the tap is a dumb idea. First, it can slip very, very easily and sink butter is no fun. Also, get distilled water with some ice cubes to wash your butter. If you're gonna get quality butter don't bother with tap water mineral garbage in your butter. Also, make cultured butter instead.

I am an Indian and you might know about ghee, it is also made in a similar way, only after the butter is seperated, it is still churned further for a while before being cooked on high heat where the solid lumps seperate and what's left is pure ghee (clarified butter). My mother makes ghee every month and always seperate some nice butter for us to enjoy.

I’m 68 years old. My aunt had a wooden butter churner and a cow. 60 years ago my cousins and I tried to churn that cream into butter. We never made it- too weak- the older cousins took over otherwise there would have been no butter for lunch. There was a time not that long ago when people were still make butter the hard way in the good ol’ USA.

it's pretty easy to imagine. she was just making whipped cream and stirred it too long. how did they invent whipped cream, you may ask? that's a little tougher. but humans are smart, they probably were stirring their cream for whatever reason and noticed that the air incorporated made it thicker. decided to experiment and whip it a bit more. found a delicious new way to use cream. it would have been room temperature, so it would have turned into butter pretty quick.

It’s also possible to make butter like this just by shaking the heavy cream in a regular jar. In my family, it’s tradition to make homemade butter for our holiday meals. We take turns passing the jar around and shaking it until we have butter.

Having used a churn as a kid on my grandparents dairy farm, the key to making it last longer is to squeeze all the milk out of it you can. Churning turns into pounding and mashing with all my 7 year old weight. But THAT milk is REAL "buttermilk" and is the best stuff ever to soak your cornbread into.

my wife and I do this sometimes by shaking it in a mason jar. It's a hell of an arm workout but it is like you describe, suddenly, almost instantly, the butter DECIDES to just yeet out of the cream all at once. It's really satisfying. We did one this weekend and folded in salt tarragon and lemon zest.

Even better than the butter itself is the buttermilk when you make your own. It's nothing like the cultured buttermilk you buy at a store. When I made my own I was surprised how delicious it was, it's amazing to use instead of regular milk in cereal.

My dad grew up visiting his grandparents (late 50’s-60’s) who were sharecroppers in the mountains of NC. One of his chores was to churn the butter for the week. He said he would do it to the beat of different songs he knew to see if it made a difference… no tv only a “shitty 1000 year old radio” and no indoor plumbing… the *insane* stories he has… says it was the best times of his life.

My mother churned our butter, in a wooden churn, from the cream on the top of the fresh milk in tall stainless steel cans that her cousin delivered to us from his farm. The butter was white and no flavor can compare to homemade butter made from fresh cream carefully skimmed from the top of fresh milk.❤

Where I grew up we had a place that the local elementary school kids would go to once a year on a field trip and it was essentially a town preserved from the 1800’s that would talk about all the aspects of life at the time. I’m one of the homes, the tour guide showed up the original devices they used to churn butter by hand and we all got to try it out on a smaller scale and do exactly what you just did in this video. It was a lot of fun, thanks for bringing back those great memories.

I was at a community event once where we all sat around a giant table and took turns shaking a giant mason jar full of creme. It was so much fun seeing how the consistency change every time it came back to me. Everyone wanted their turn. I think it helped us focus on the discussions more too! Great idea for the free labor from the lady who brought it, but honestly what a great group activity.

@@skasere1 You can buy a quart of heavy cream for 5 dollars and it will yield about 3 sticks of butter and also buttermilk, which isn’t just waste. A box of 4 sticks of unsalted butter is about 4 dollars. It’s slightly cheaper, but it’s not some huge inconvenience, especially for someone looking to make homemade butter

To keep us kids busy in diners, my parents used to hand us little packets of cream and tell us to shake them to make butter. It was a lot of fun to make butter with them. I don’t think you can do that with modern fake coffee creams anymore.

I remember being invited to dinner by our family friends where the host would have small tupperwares of heavy cream (taped down so there wouldn’t be spills!) and assign us kids to make butter to serve at the dinner table. Us kids would be having fun shaking our tubs, watching with awe as the butter lumps would start to form, while the adults got to relax and chat. During dinner us kids would be so proud that everybody got to enjoy our homemade butter. It’s a brilliant scheme! 😆

My daughter taught me how to make it years ago, but she taught me by buying heavy cream, putting some in a small jar (and add salt if you want), then you just keep shaking the jar & it will just turn into butter

Except don't add the salt until finished, like the book said. Adding salt too soon will slow it from turning into butter. My mom taught me to just put the cream in a jar and shake it. You can also use an electric mixer.

Based on what you showed on camera, you might not have washed the butter enough. I usually do it in a bowl and with the help of a spatula. I'll pour a little cold water, mix the butter around, rinse, pour more water, mix around, rinse, until the water the comes out is completely clear.

I love making my own butter. Using a food processor makes it MUCH easier. Make sure all your utensils and your cream is cold

Exactly! My husband wanted to get this hand crank,I told him absolutely not. Why? I know he'd leave me doing the work because his of his aches and pains. I showed him how to do the food processor and then explained the consequences of not cleaning up. We've been doing it for a while now and don't regret it.

The actual reason his is going bad is because he's not washing it well enough. You're supposed to put it in a bowl, use very cold water, and sort of knead the butter w/ a utensil. The water will turn cloudy and whitish. You pour that out, add more water, and repeat until the water is no longer clouding up

You'll typcally want to use liquid heavy cream. You should try just putting it in a jar and shaking vigorously. Also, room temp. cream works better.

I just use heavy cream in a water bottle and let it come to room temperature. Then I shake the living hell out off it for roughly 60 seconds and you get butter. It takes no time at all and you can get some cheap whipping cream.

That's what my 3rd grade class did back in the early 80s. The teacher put heavy cream in a glass jar and we all took turns shaking it. Fun times😊

Heavy whipping cream would've been a lot cheaper than clotting cream. The clotted cream is already processed. Obviously, you've never made butter before. I made it when I was a little kid and then once since I've been married.

1. Buy heavy whipping cream 2. Freeze it 3. Defrost in Frig 4. Pour off the separated buttermilk 5. Use electric blender or whisk to whip into butter. 6. Give solid chunks a quick rinse off if needed. You now have instant butter, that will stay fresh for weeks because all the butter milk was separated during the freezing/defrosting process!!

I love the "It costs three times as much, makes a mess out of your kitchen and goes bad faster." Like there's kinda a reason people don't make butter outside of if they live on a farm. It's just cheaper and more convenient to buy it.

It may be more convenient, but I'm not sure it's cheaper. Based on some of the other comments here, I'm thinking homemade butter doesn't go rancid faster, either, if rinsed in water sufficiently. If you go all the way with the process and make ghee, as I commented elsewhere here, it has to be cheaper. Ghee is fairly expensive when bought in the store. With practice, it's probably a lot less messy, but every time you prepare a meal, some mess is involved that has to be cleaned up. Cleaning the kitchen is a routine task anyway.

I make my own and it’s not more expensive. It also doesn’t go rancid quicker if you wash it thoroughly. I recommend giving it a go, it’s fun, my daughter helps me do it

Believe it or not, it works so much quicker if you use your hands to work the cream into butter. That's how we do it.

When I made butter by hand, we poured the cream into a water bottle and shook that like crazy for less than a minute. With enough vigorous agitation, cream turns to butter real quick.

We learned to make butter in kindergarten. It’s a US southern thing I guess. My kids all did as well. We got sanitized baby food jars and cream and shook it until the butter formed. Then we prepped it and took it home to show our parents and eat it. Basic skill here. Of course we were also taught how to out run alligators at that age as well. Not kidding. It’s a must in Florida.

Being an Indian.. I'm astonished by the fact that there's an Entire Book on how to make Butter😅 Here in our place.. we just churn Curd with some water and Get Really good Butter with Delicious & Healthy Buttermilk as a byproduct (which is spiced & savoured later) !😊

I love drinking buttermilk as it is. The bacteria is also good for your gut. Recently, some UK shops have started selling it in a litre containers, before I was hard to come by even in small ports sold for baking. But then, I couldn't buy kefir in here for 30 years - now it is all the rage!

I make butter with my 2nd graders when I teach states of matter. Good fun! They really enjoy taking turns shaking the jar. I really enjoy going home with extra homemade butter we didn't use in class.😊

We heat milk for daily use, so we use the cream that settles on top while cooling for making butter. Once you have enough, you can churn it with any method and make butter!

You can also do this with an electric hand mixer or stand mixer. Takes about a half hour but totally works.

I once made butter when I was a kid. With an electric kitchen mixer. My parents were shaking their heads as I sat there for about what felt like three hours. But it did work! I was so happy when my stubbornness paid off. Now that I think of it, that's propably why I am, how I am.
