I've had the 2550 Encore for nearly 25 years and have not had any issue other thank typical gasket failure this last year. I burn it at 500 to 600 degrees and don't put anything in it but good dried wood. Pine, oak, pecan, and mesquite. Mesquite burns very hot so one must keep an eye on it because it will get hot quickly.

I was just looking at a Vermont Castings stove video and they had a heat-based mechanism... I assume to automatically slow the burn once it gets up to temp (to keep a long, slow burn overnight without reloading, I assume). It's not really the 'optimal burn' selection you were looking for, but it's along those lines, I think.

I use a fireplace shovel, transfer ash and embers into a wok which is resting within a large aluminum basting pan. I take that outdoors and use a French fry basket to separate the ash into a galvanized trash can, saving the red hot embers. I can restart the fire in no time and can save and extinguish some embers for future use.

I made omelettes on my Intrepid II the other day and it worked well with my cast iron pan. Just cook when the fire has died down a bit, a roaring fire will probably be too hot.
