Ingredients:
Yellow Cucumber medium sized
To grind:
1.Mustard 1tsp
2. Urad dal 1tsp
3. Coriander seeds 2 tbsp
4. Cumin 1/4 tsp
5. Methi 1/4 tsp
6. Dry Red chillies 7-8 (according to your taste)
7. Garlic 3 cloves
8. Coconut 1 cup
9. Onion 1/2
To cook with cucumber:
Tamarind a small bowl
Jaggery 2 tblsp
Salt 1 tbsp
sliced onion 1/2
For thadka :
oil 2 tblsp
curry leaves
Mustard 1/2tsp
Urad dal 1/2 tsp
Red chillies 2
garlic crushed
Method:
1. Roast 1-6 ingredients under the list of "grind" with little oil & grind with coconut, half onion and 3 cloves of garlic.
2. Cut Cucumber Into big chunks and give 2 slits.
3. Cook Cucumber with jaggery, tamarind juice, half onion and 1 tbsp salt until it's done.
4. Add ground masala, add little water.Curry has to be thick. So do not add more water. Adjust salt.
5. For thadka:
Heat 2 tbsp of oil, add mustard, urad dal, crushed garlic curry leaves and two broken chillies .
6. Pour the thadka over the curry and enjoy with rice.
Note:
1. The same recipe can be done with yellow pumpkin ( Dudi) also.
2. You can avoid adding Jaggery . But jaggery gives good sweet taste to the curry.
