Nice! I don't understand though why everyone who does this FOLDS the edges of the eggs back over the edge of the toast? Why not simply chop off the edge of the egg with the blade of the spatula and place the cut piece atop the rest of the egg. Also avoids the thick egg crease at the edge of the sandwich. At least that is how I do it. But then, I am not a follower;) Never the less your ideas presentation was excellent. Thanks
