Chicken Curry -1
Ingredients
Chicken -1/2 kg
Small Onion -5
Onion -1/2
Ginger - Small Piece
Garlic-3
Green chilli - 3 or according to
Chilli Powder -1tbsp
Turmeric Powder -2 pinch
Coriander Powder -1 1/2 tbsp (roasted )
Garam Masala -1/4tsp
Curry leaves -
Coconut Oil - 1tsp
Coconut Milk - 4cups
Salt -1 1/2 to 1 3/4 tsp
Ash Gourd - 1/2 cup
Vinegar or lemon juice - 2tbsp or accroding to ur taste
For Seasoning
Small onion -5
Coconut oil -2TBSP

Ginger Crushed -1 tsp
Garlic Crushed - 2tsp
Pepper crushed -1/4tsp
Fennel Seeds -1/4 tsp crushed
Green chilli - 3
Chilli Powder -1tbsp
Turmeric Powder -2 pinch
Coriander Powder -1 1/2 tbsp
Garam Masala -1/4tsp
Ripe Tomato -2 medium
Curry leaves -
Coconut Oil - 2-3 tbsp
Thick Coconut Milk - 1 cup
Hot water - 1 cup
Salt -1 1/2 to 1 3/4 tsp
Ash Gourd - 1/2 cup
Forr Seasoning
Small onion -5
Oil - 2tbsp

Method
Here I have done 2 recipes of ash-gourd chicken curry.
Recipe 1: Easy version
For this we need small pieces of the chicken. Take kadai add some ginger , green chilly, garlic and some shallots or 1/2 onion, turmeric powder, chilly powder, roasted coriander powder, ¼ tsp garam masala , salt and coconut oil.Mix this well. Now add chicken pieces and marinate it for 30 mins. Then add the 4 cups of coconut milk (3 cups grated coconut ground in 3 ½ cups of water). On medium flame just stir the vessel occasionally. The chicken should be ¾ cooked then we can add the ashgourd pieces. Mix well. Cook well. Check the salt and spices. You can add vinegar or lime juice after you turn off the heat. Add some slit green chilly.
For seasoning add some shallots to heated coconut oil. Add curry leaves. Add it to the chicken curry. mix well
Recipe 2 : My version
Take a kadai add coconut oil and heat it on medium flame . Add crushed garlic and ginger. Add crushed fennel and pepper powder. Add shallots/ onion and green chillies and add salt and saute well. Add some curry leaves. Saute till the onions are golden brown. Add the powders(turmeric, chilly, coriander ,garam masala).Saute well. Add some tomatoes. Saute well with some water. Only when the tomatoes are cooked well then add the chicken pieces. Don’t add water. Cook for 5 mins and then cook for 10 mins with the lid on. Add little hot water if the chicken is still not cooked. stir occasionally. Now when the water is dried up well. Then add the ashgourd. Close the lid and cook well. Now add the 1 cup coconut milk. Now keep the flame on low . check the salt. Don’t stir too much. Add the seasoning now
For seasoning add some shallots to heated coconut oil. Add curry leaves. Add it to the chicken curry. Mix well.
