Chicken Burrito
(3 burritos)
1.5 lb chicken thighs
1 cup Jasmine Rice
1 Tbs Avocado Oil
2 cups Vegetable stock
¼ cup chopped onion
2 cloves minced garlic
1 Tbs cumin
4 small tomatoes
2 jalapenos
1 halved white onion
1 Can black beans
Shredded Lettuce
Carb balance Tortillas
Taco Seasoning
1 Tbs Chili Powder, ¼ tsp garlic, ¼ tsp onion, ¼ tsp red pepper flakes, ¼ tsp dried oregano, ½ tsp paprika, 1 ½ tsp cumin, 1 tsp salt, 1 tsp pepper
Avocado Crema
1 Avocado, 1-2 squeezed limes, ½ cup cilantro, 1 tsp garlic powder, 1 tsp salt, ½ tsp pepper, 3 Tbs Lite sour cream, 1/3 cup water to thin
On a baking sheet place tomatoes, jalapenos, and onion. Spray with a little oil and season with salt and pepper. Place in the oven at 400’F for about 15-20 min. Remove and place in a food processor with lime juice, salt, pepper, and a bunch of cilantro. Turn on about 1 min and then set aside to fully cool.
Season the chicken thighs with lime juice and taco seasoning or packet. Let sit for about 5 minutes to marinate, then add to a hot pan and cook thoroughly.
In a large pot over med-high heat add 1 tbs oil, garlic and onions. Cook down for about 1 min, then add salt, pepper, cumin and rinsed rice. Give a little stir and allow to toast for about 3-4 minutes. Now add the stock, cover and simmer until rice is done.
In a blender combine the ingredients for the avocado crema and blend until nice and smooth!
