yuji san , after you torch the skin on the fish you put it in an ice bath to stop the cooking , and the other you didn't if you use those fillets for sushi wouldn't you get more flavor from not putting them in an ice bath ? The oils that come from the torched skin would have more flavor ,🤔

The roasted one loses its fragrance when soaked in ice water, so please cut it as it is. After blanching, cool with ice water, tighten your body, and then cut.
