Malt is grain (usualy barley) that is allowed to sprout before being dried and ground up, allowing it to sprout makes the plant turn the starches to sugars, I love malt that you add to drinks - one of the brands is Horlics if youre interested

Here's why I feel like KZitem will always have the advantage, is that people will actually try the recipes and go back and like the videos later, where as tiktok is made for short quick eye catching recipes and many of the likes are gonna be from people just thinking it sounds good vrs actually trying it

If you reserved a bit of the marinade from the first recipe for the beef and set it aside to mix with the ramen before adding the cooked meat might help if you make it again. I agree that plain ramen is needs something and if the beef doesn't have a ton of that marinade on it after cooking it won't help flavor all of it when mixed through. It must be frustrating to try and make recipes from sites that give no measurements. It seems like you usually do a great job figuring it out though.

Korean food isn't as salty as American food, so it's likely that there isn't as much salt as the other recipe. Japanese soy sauce, of which there are also many kinds, has a much different flavor profile than Korean soy sauce. There are at least 3 types of soy sauce that are commonly used in Korean cooking, so the end result will also be different depending on the type of soy sauce used (it should be either jin ganjang or yangjo ganjang) and the brand of soy sauce. On another note, Korean doenjang is usually much saltier and stronger in flavor than miso, but that also depends on if you're using red miso, white miso, or awase miso which also have different flavor profiles. I'd say that Korean doenjang is more similar to red miso, which is usually saltier. In any case, it's certainly stronger than white or awase miso!

for maangchi's recipe, its bland because you let all the sauce drain out by using that pan. the juices should caramelize around the meat and the end product should have been in its marinade/sauce. Also if you just go to a korean market, they'll have meat thats already pre-sliced and ready to be marinated in the bulgogi sauce so you dont have to worry about chunky pieces that arent seasoned and it'll just be easier and tastier in general. also, idk how i feel about you comparing one of the most iconic korean chefs on youtube vs an american tiktoker for an actual korean dish...? an extremely problematic tiktoker at that. there's so many other asian creatives and chefs that are so underrepresented and underappreciated. maybe highlight them for a change.

Malt is grain (often barley) that has been germinated to allow the inaccessible nutrients in the grain kernel/seed to be converted into accessible/usable forms. If they allowed the germination to continue it would yield a plant, but they stop it by drying it and then it's often used in fermentation processes like making beer or whiskeys. Depending on how it's used/processed or mixed with determines the end product of like...a beer, malted beverage, malted milk, maltose.

I agree that it's pretty wasteful to make bulgogi with filet mignon or ribeye, a nice sugary, sour and overnight marinade like that is made for tenderising! Also I think the filet mignon actually makes Maangchi's take worse not better, since it's not a very strongly flavoured and pretty fatty cut, which makes it delicious, but not in a way that lends itself to drowning in hot sauce.
