Ler Sin 我觉得因为水的比热容比较高,用冷/冰水水浴,有两种情况,1,烤箱达到了预热的温度,这个时候放温度偏低的水,是会吸收热量让烤箱整体降温的,之后再随着烤的时间慢慢升温,可能会导致烤箱因为很难达到要求的预热温度而一直加热。对于蛋糕而言,温度会是从冰冷慢慢慢慢上升,时间会比用热水长很多。2,烤箱和冰水一起预热,那就是和用热水一样的效果了。 假如用热水水浴,温度一般比较稳定,原理其实是保持烤箱里面空气湿润,并且烤箱内温度也会更稳定,烘烤结果也会更均匀,因为水的比热容比空气大很多。所以我们需要的是水蒸气。所以根据我们对于这款蛋糕的需求,和水浴法的初衷,我还是觉得用热水水浴比较适合。😊

I'd love if all of these videos were translated, they're great. I can't help translate it, sorry, but this recipe is for a Japanese Cottonsoft Cheesecake. They're fickle to make but amazing when you get the right. (And tbh when you mess up they're pretty good even still) have fun making them!
