vegetarian tricolor rice
Ingredients for Tiranga pulao (4 servings)
- Basmati rice (2 cup)
- Whole spices (2 bay leaf, 1 star anise, 7-8 black peppercorns, 3-4 Cardamom, 5-6 cloves, 1 inch cinnamon stick)
- Cumin seeds (1 tsp)
- Spinach (2 cups)
- Blanched Spinach puree (1/2 cup)
- Green peas (1/2 cup)
- 1 Carrot (cut into cubes)
- 2 Tomatoes (chopped)
- Paneer cubes (100 gms)
- Onion (sliced)
- Cashews (handful)
- 2-3 Green chilies (finely chopped)
- Red chilli powder (1 tsp)
- Turmeric powder (1/2 tsp)
- Ginger garlic paste (1 tbsp)
- Salt as per taste
- Oil (9 tbsp)
Instructions:
Make plain rice:
1. Wash 2 cups basmati rice and then soaked it for 30 minutes.
2. In a pan heat 3 tbsp of oil then add 1 teaspoon cumin seeds and then start adding our whole spices (2 bay leaf, 1 star anise, 7-8 black peppercorns, 3-4 Cardamom, 5-6 cloves, 1 inch cinnamon stick). We are making pulao without pressure cooker.
3. Add one onion (vertically sliced) and sauté for 2 mins.
4. Then add 1 teaspoon salt and 1 tbsp ginger garlic
paste
5. Add the 2 cups soaked basmati
rice, then add 3 and 1/2 cup of water. Cover and cook until the rice absorbs all the water and becomes dry.
6. Now fluff the rice with the help of a fork and allow the rice to cool down for at least 30 minutes. The rice will hold grainy texture after it cools down properly then divide it into three equal portions.
Saffron Layer
7. In a pan Heat 2 tbsp of oil add two finely chopped tomatoes and salt as per taste. Saute the Tomato until it becomes soft and mushy. Then add 1/2 tsp turmeric powder, 1 tsp red chili powder and some carrot cubes. You can also add orange bellpepper.
8. Add our cooked basmati rice mix it gently without breaking the rice. Our saffron color layer is now ready.
White Layer:
9. Heat 2 tbsp oil, add handful cashews and 100 gms paneer cubes. Add another portion of cooked Basmati rice without sautéing paneer.
Gently mix to create the white layer.
Green Layer:
10. In a pan, add 2 tbsp oil, chopped green chilies, and spinach. Sauté until cooked. Add green peas, you can also add green beans and green bellpepper. Cover, and cook until tge veggies are done.
11. Mix with the remaining portion of cooked Basmati rice and 1/2 cup blanched spinach puree.
Note: For Blanched spinach: briefly immersed spinach in boiling water and then quickly cooled in ice water.
Or Microwave the Spinach for a minute.
Then, Blend to make puree.
12. Assemble the layers - saffron, white, and green.
Serve the Tiranga Pulao as a special dish for Republic Day. Enjoy!
