Ingredients:
Cupcakes
2 c (228g) cake flour
68 g freeze-dried strawberries crushed
3 tsp baking powder
1/2 tsp baking soda
1/4 tsp kosher salt
1 c (250 ml) whole milk
1/2 c (120 g) sour cream
1 c (200g) sugar
1/2 c (113g) unsalted butter
4 egg whites
1 tsp strawberry extract
3 drops pink gel food coloring (optional)
Preheat oven to 350.
1. In a large bowl, whisk together dry ingredients: cake flour, sugar, baking powder, and kosher salt. Whisk in the strawberries. Set aside.
2. Combine the sourcream and milk, set aside.
3. In a bowl of a stand mixer, cream the butter and sugar for 5 minutes.
4. Add in egg whites, extract and color gel. Combine.
5. Alternate in dry ingredients and wet. Start with the dry and end with the dry. As shown.
6. Bake for 18-20 minutes or when a toothpick comes out clean.
Micro-batch of Crème Pâtissière filling
Ingredients:
1 c (250 ml) whole milk
1/4 c (35 g) sugar
Tiny pinch kosher salt
1 1/2 T cornstarch
1/2 tsp vanilla extract
2 yokes
2 T unsalted butter
1. Bring milk to boil in a sauce pan.
2. In a heat-proof bowl, whisk together yokes, sugar, salt, cornstarch and vanilla.
3. Temper milk into yoke mixture as shown.
4. Put back into sauce pan and heat on medium/low until thickened.
5. Pass it through a fine mesh sieve. and add butter.
7. Cover with plastic wrap making sure to touch the top so a skin doesn't form. Cool in refrigerator.
Whipped Cream cheese frosting:
8 oz (226g) Cream cheese softened
1 c (200 g) sugar
2 c (500 ml) heavy cream
1 tsp vanilla extract
1. To make the whipped cream cheese frosting, beat cream cheese and sugar until smooth.
2. Add in about 1/2 c of cream to loosen it.
3. When smooth, add in the rest of the cream and whip to stiff peaks. Pipe on top.
