Hello everyone! For a little while now, I've had this strange feeling--as if all the things I did not achieve, all the places I did not go, and all the things I did not experience last year are adding up. I've felt not very productive. Honestly, I've felt paused.
I've felt like I'm getting older but (due to world events) am just not going anywhere. And its a weird and, also, illogical feeling. I wanted to make this video to remind myself and to reach out to anyone who might be in the same boat as me: we are not our failed resolutions lists.
There's a Bob Ross picture I retweet every time it comes up on Twitter, and the caption is: 'as long as you're learning, you're not failing'. And I think that's a really important thing to remember. If you're learning, you're growing. You're not paused: you're still moving.

HERE IS THE MUCH REQUESTED PANCAKE RECIPE lol
Ingredients:
¼ cup self raising flour (plain or wholemeal) + an additional table spoon depending on the consistency and if you're using plain or wholemeal (wholemeal needs slightly more liquid).
1 generous teaspoon of sugar
¼ cup milk (I use soymilk)
1 tbsp flavourless oil ( I use sunflower. this makes the pancakes less dry, but omit if you want them to be healthier and pop a lil more milk in)
1 egg
Pinch of salt
butter for the frying pan (I use Flora plant seed margarine)
Method:
- Whisk the egg a whole lot in a medium/large bowl until the top is a little frothy
- add in the sugar, salt, milk and oil, and whisk
- add in flour and gently whisk. Too much whisking here will make the consistency thicker and less fluffy
- add an additional spoon-ish of flour to get it to the right consistency. You can see @ 1:08 how thick this should be.
- add a handful of mixed berries! or a few chopped up cubes of dark chocolate! or nothing. Up to you. Mix them in.
- Ideally, you want to let the mixture rest for ten minutes; this gives the batter time to become fluffier, something about flour oxidising and interacting with the liquids. Idk. It works.
- THIS IS IMPORTANT: you want the frying pan to be really quite hot before you put the batter in. This means that the outside will be a little bit crisp, while the inside is perfectly fluffy. So, heat up your pan on a medium heat for a good 5 or more minutes so that it's nice and hot (but still at a medium heat), and THEN put your butter on. wait for the butter to melt, and then dollop half of your batter right in the centre of the melted butter, so that when the batter spreads out there's a layer of butter between it and the skin of the frying pan. This will help make the outside crisp and delicious.
- once your pancake starts bubbling all over, you flip it. Cook it until it's done.
- Cook your second pancake AND VOILA.
YOU HAVE MADE THE (in my opinion) PERFECT PANCAKES
