Found pla grob at a market near me! It's so tasty and smokey! One cool thing you can do with pla grob (or katsuobushi, I'd imagine) is pick off the meat from the bones (use the bones for this soup of course), chop it fine, toast it in a dry skillet, then add fish sauce or light soy and palm sugar (maybe some sesame seeds if youre so inclined) and cook until dry. They become like these salty/sweet/smokey crispy bits of goodness that are so tasty sprinkled on some jasmine rice

lol "My precious.." XD so funny. The soup looks amazing as usual! I love your tom kha gai and have yet to make tom yum. This looks oddly like a more approachable soup than tom yum for some reason...maybe because it utilizes leftovers, which I love doing ^_^ thank you for an awesome video/recipe!

I think I've seen galangal once or twice in an asian grocery store but where do you get the kaffir lime leaves? I want to try Tom Yum!

Ask the store. Kaffir lime leaves may be in their freezer, along with frozen galangal.

Prik Jin Da Dang (พริกจินดาแดง) or you can use Prik She Far (พริกชี้ฟ้า) which is longer and bigger but less hot.

Expand your palate. For example, in our pho, we use beef or chicken stock as the base and throw in pork, beef, shredded chicken and shrimp with the noodles and herbs! And fish sauce as the salty agent. SO GOOD!!!
