If you have to serve 20 steaks, i cant believe you will use 20 cast iron pans on the station. Having quality meat and putting a bit butter on them at the end did the job for me since decades. No need for the idiot shallow frying and wasting fking tons of butter and branches of thyme and 100 of cloves of garlic per service. Real chefs know.

I’m always impressed whenever I see someone cook up a THICK steak and it turns out wall to wall medium rare. It’s so hard cook thick steaks to begin with (without either over cooking or under cooking them) and to see someone cook it not just medium-med rare, but wall to wall med-med rare is just incredible. It’s way to easy to think any steak’s not quite done yet only to later cut it open and find it just grey in the middle

I prefer the grill because while I'm NOT a chef, I know that an important part of cooking is presentation. And i get some of the best-looking steaks off the grill. That being said, I also have a blue diamond "grill pan" (not sure what an actual chef calls it) that has a raised area where it won't cook in its own fat/grease. That can be a good thing or not depending on the outcome you are looking for. But it does a hell of a job simulating the grill marks and presentation. And I love using it when it's winter or raining and indont wanna fire up the grill.

There is an amazing French steak house in Seattle called Bateau and their steaks are prepared this way at large. It is amazing but not the only way to get an amazing steak. Glad you gave the peanut gallery what they asked for and flawless execution. But that could be said with every technique you show us. Keep it up Chef!

This looks really good. I would have never thought it would cook up like that in a cast iron pan. I love using butter, but never imagined that so much would finish the steak without on a grill or hitting the oven. I wonder how it would turn out if not using gas and on an electric stovetop? It looks absolutely amazing!

I just smoked one of these. When it got to 120 i rested it for 15 min then seared on my grill at the hottest it can get for a min and a half each side. One of the best steaks ive ever had.

Still think reverse sear is the best method. You get the temp edge to edge no grey bits and the sear at a super high temp gets a wonderful crust. IMO of course ❤

I cook tomahawks all the way on the gas grill to perfection while basting in garlic bread and that shit is the bomb. Way better then the cast iron. Both are great but if people are complaining about using the gas grill probably watch to many videos or can't cook a steak like that. Broiler cook in a high end steakhouse and I definitely approve of your steak cooking

For all those who think they’re master chefs after watching TikTok😂. Put it on the BBQ. It depends on the flavour profile you want. Butter basting isn’t always the perfect way to eat steak. A good hickory smoke under that grill would be fantastic flavour

This is a big divide in the steak-eating community. I'm personally a cast-iron kind of guy, but grilled steak is great too, just not my first choice. I'll pick cast-iron every time.

Please Chef I understand that everybody have their own ways of doing things but everybody in the comments are right you are a chef you know what you're doing and it have to be someone who cannot cook unless they are using cast iron that keeps telling you that I'm a chef and I know that that is not the only way that you cook a steak or any meat for that matter
