Neither E. coli nor Salmonella is a concern with salmon. If it does occur, it is the result of improper handling - cross-contamination - of the salmon with chicken or beef. The primary concern of eating raw salmon is a possibility of worms. Salmon labeled for raw consumption (sashimi) has been the deep frozen (-31°F) to clear the fish of any parasite. For anyone wondering, I made the grilled salmon with avocado salsa and that was a hit! I also really liked the simple chili sauce salmon too! You can't get it much easier than those ones. I'll definitely make them again

I worked for a seafood company growing and we label our seafood sushi grade but it is just a marketing trick like all natural. Sushi grade does not mean anything. There is no law or regulation indication how a seafood can be sushi grade.

I been working with the biggest shrimp farm in Florida. and I also work for the largest seafood importer in Los Angeles. I have developed shrimp product that we called sushi grade.it is fresh, never frozen. We sell the shrimp to publix in Florida. Let me ask you: who is the government body that regulate sushi grade in US? How can my fresh shrimp never had To be frozen be sushi graded.

If you live near a Japanese supermarket (Mitsuwa, Marukai, Tokyo Central), some Korean supermarkets (HK) normally carries sashimi. You can also try your local fishmonger. There are also many companies on the Internet that will ship to you.

No, salmon may contain parasites which will make you sick. Freezing salmon to -31°F for 15 hours will kill all parasites and safe to eat. This is an FDA requirement for all salmon labeled for raw consumption. www.fda.gov/downloads/Food/GuidanceRegulation/UCM252393.pdf You should also be able to do this yourself by packing salmon with dry ice in an insulated container. The salmon should be packed and in contact with the dry ice for at least 24 hours. Dry ice has a temperature of -109°F
