I read a legend, that long ago; a certain Mr. Varma, a strict vegetarian, opened a restaurant in the Nizam run state of Hyderabad . Vegetarian restaurants were forbidden in those days and Mr. Varma wasn't going to give up. He made sure the chicken was cooked outside his restaurant. While he didn't know much about frying chicken, there was an issue of keeping the vegetarian utensils separate from the non vegetarian ones. He came up with a crude rotisserie to roll the chicken. He rolled it over coals and dabbed some clarified butter on it. The top layers of roasted chicken were sliced out, a dash of salt and pepper added, plus a generous amount of butter and coal roasted garlic and finally rolled in a chapati and served. This item was soon popular. One of his early patrons, was an Irishman, Mr Shaw who ate it every time he passed by that area. Soon the news of the new dish reached the ears of the Nizam and to honor their collab, his excellency, decided to call it Chicken Shaw- Varma. It eventually became popularly known colloquially as Shawarma. Viva Hyderabad-Ireland. Spread this to shawarma fans.

Shawarma (/ʃəˈwɑːrmə/; Arabic: شاورما) is a popular Middle Eastern dish that originated in the Ottoman Empire,[1][2][3][4] consisting of meat cut into thin slices, stacked in an inverted cone, and roasted on a slowly turning vertical rotisserie or spit. Traditionally made with lamb or mutton, it may also be made with chicken, turkey, beef, or veal.[5][6][1] Thin slices are shaved off the cooked surface as it continuously rotates.[7][8] Shawarma is a popular street food in the greater Middle East, including Lebanon, Egypt, Kuwait, Iraq, and the Levant, also served widely in Saudi Arabia.[9][10] It is also widely popular in South Asia, mainly Pakistan and Afghanistan.
