Prep Time: 5 min | Total Time: 5 min
1. Flax “egg” - mix 1 tbsp ground flaxseed and 2 ½ tbsp warm water together in a small bowl and let rest for 5 minutes to thicken;
2. Chia“egg” - mix 1 tbsp whole chia seeds and 3 tbsp water together in a small bowl and set aside until the mixture becomes slightly thick and gelatinous (around 5 minutes);
3. Chickpea “egg” - combine 1 tbsp chickpea flour with 2 tbsp water, stir well and let rest for 5 minutes before using;
4. Psyllium “egg” - mix 1 tsp whole psyllium husks with 3 tbsp water in a small bowl and leave for a few minutes to gel;
5. Starch “egg” - combine 1 tbsp potato or arrowroot starch with 3 tbsp water;
6. Oat “egg” - combine 2 tbsp oats (quick cooking rolled oats work best here) with 3 tbsp boiling water and set aside for 5 minutes to thicken;
7. Aquafaba “egg” - use ¼ cup aquafaba as a replacement for one egg (can mix straight into batters/doughs or whip it up in a stand mixer);
8. Banana “egg” - use ¼ cup mashed banana as a replacement for one egg.
