Hello folks!
Today I made a batch of traditional coconut ice! This is a very old fashioned sweet treat and has been around for a LONG time :) Tastes just like a Bounty bar! It’s very popular here in Scotland! You can also add a layer of melted chocolate to the top or even make a layer of fudge for the base if you prefer. I’m keeping it simple today with the classic layer of white and pink :)

What I used - An 9x9 inch tin - Greased with margarine and lined with baking paper.
* 397g (14 oz) Can sweetened condensed milk
* 1 Teaspoon vanilla extract
* A pinch of salt
* 180g (6.3 oz) Icing or confectioners sugar
* 397g (14 oz) Desiccated coconut
* A tiny amount of pink food colouring
