The ingredients for the dough are A) 1 kg of country flour, B) 250g flour (Flour '00'), C) 240-250g sourdough, D) 2 medium eggs, E) 175 ml seed oil, G) 150 ml orange juice, H) Almost a spoonful of sugar, about 15g, I) Almost a spoonful of yeast, about 6g, I) About 1g Mahleb, 1g ground anise, 2g salt, 1g ginger, 1g ground mastic and K) 275 ml warm water.
