For Eliza's wonderful tahini pies, with wholemeal tahini, you need A) Syrup, B) Dough and C) Filling.
The ingredients for the syrup are A) 1 glass of 200 g sugar, a spoonful of honey, a spoonful of lemon juice and 1 glass of 200 ml of water. Alternatively use syrup of sweets or 6 spoonfuls of honey and 6 spoonfuls of water.
The ingredients for the dough are A) 450 g rustic flour (light yellow), B) 150 g Flour "00" (strong flour without yeast), C) 60 ml seed oil, D) 11g yeast, E) 2 sachets of mastic with sugar 10 g. G) 10 g mahlep, H) 1 teaspoon baking soda, about 5 g, I) 1 teaspoon ginger, about 3 g, H) 2 tablespoons white or brown sugar, about 40 g, I) 1 teaspoon cinnamon, about 5 g, K) 1-2 g salt and L) 2 glasses of lukewarm water 400 ml.
The ingredients for the filling are A) 8 spoons of sugar 160 g, B) 1 spoon of cinnamon, about 8 g, C) Half a spoon of ground cloves, about 5 g, D) 300 g of raw tahini, preferably with whole-grain sesame.
In the end, I will use 2 more spoons of sugar about 40 g. #MEchatzimike
