Remember that 20lb brisket ? Yea that monster i was able to score ! Well this is trial #2 of a injected and foil boat brisket. We used meat church holy cow and a home made 1/4 cup of pepper and 1tbs of kosher salt to add More pepper. Started off with a simple prime tallow injection from a previous brisket , seasoned the brisket let it sweat and fired up the traeger @200. Pro blend is the pellets used in this cook since it had oak ,cherry and hickory. Overnight cook cooking until we got to 167 internal , we then wrapped with foil boat method
Raised temp to 250 to render the remaining fat and send this bay home.
3hrs later we hit 203-205 internal 17hr total cook on this brisket. Pulled it let the cooking process stop and rested it in my oven for 3.5hrs @170 until we finally sliced into it, delicious and beautiful bark with this method and super juicy with that tallow , definitely give this a try!!
