Short cut ribs are the big fatty ribs that taste like brisket. They are located on the cow where the brisket is. This recipe needs to be cooked low and slow to break down the fat and render. Here are the instructions.
-Let meat get to room temperature.
-Cut silver skin off of the meat side (not ribs as this will keep them from falling apart.)
-Put your favourite rub on generously.
-Let the meat sit for at least 1/2 an hour with the rub on
-Preheat grill to 225 with super smoke if possible (quicker cook try 250)
-Leave on grill undisturbed for at least 2 hours
-Check the temperature at 3 hours.
-At 160 bring out the ribs and braise them. (put them in a roasting pan or wrap them in foil with braise) (3 cups of water, beef stock, and red wine) (if you have a different braise, feel free to use it.)
-Place on bbq for another 2 or 3 hours till it wiggles. The internal temperature should be 200 to 205.
-Remove from the grill
-Take out of the braise and wrap in foil for at least 15 minutes.
-Cut and serve.
