Macaroni Pie is like the American "Mac n Cheese", but way better! Here's one of my favorite dishes that can be enjoyed on its own, or with some callaloo, stew chicken or even some pepper shrimp. I like to eat macaroni pie with a dollop of ketchup and pepper sauce at the top (don't judge me haha).
What you'll need:
32 ounces or 16 cups of Elbow Macaroni
4 cups of New Zealand Cheddar + 2 cups of Gouda (shredded)
4 tablespoons or 1/4 cup of Butter
1 cup of Heavy Cream/ Half-and-Half/ Evaporated Milk/ Full Cream Milk
1 Onion, minced finely
1 Hot Pepper, minced finely
Pimento Peppers or any mild flavorful peppers
2 teaspoons of Paprika
2 teaspoons of Cayenne Pepper
A dash of Salt (remember cheese is salty, and if you use salted butter, you have to taste before adding extra salt)
2 teaspoons of Black Pepper
1/4 cup of Bread Crumbs
Bake at 350F for 45 minutes or until golden brown at the top. Enjoy!
