Rich triple chocolate dessert cups with layers of white, milk and dark chocolate ganache poured over slices of mini chocolate roll.
If you love chocolate desserts, this is a divine treat.
Ingredients for 6 x 5 fluid ounces (150 ml dessert cups):
White chocolate - 3.5 ounces (100 grams)
Milk chocolate - 3.5 ounces (100 grams)
Dark chocolate - 3.5 ounces (100 grams)
Unsweetened cream - 3 x 7 fluid ounces (200 ml) plus ½ cup (4 fluid ounces / 112 ml)
Mini chocolate rolls (or any other small chocolate cakes) - 4
6 chunks of chocolate to garnish.
Method:
Break the white chocolate into a bowl with 200 ml of cream then heat it above a pan of simmering hot water until the chocolate has completely melted into the cream.
Repeat this for the milk and then the dark chocolate.
Pour about ¾ of the melted white chocolate and cream into a piping bag and set aside.
Leave the remainder in a bowl and set aside.
Pour all of the milk chocolate mixture into a piping bag.
Pour all of the dark chocolate mixture into a piping bag.
Set these aside.
Carefully slice each mini chocolate roll into 6 pieces.
Place 4 pieces in each of your dessert cups, so they are leaning around the edges.
Pipe the white chocolate mixture into each dessert cup until you are about half way up each cup.
Put them into your fridge to set for about half an hour.
Then pipe the milk chocolate mixture over the white layer until you are about ½ an inch (1 cm) from the rim. Again, place your desserts in the fridge for about half an hour.
Then add the dark chocolate layer until your cups are totally full. Smooth over with the back of a spoon if necessary and then return your desserts to the fridge for half an hour.
Loosen the white chocolate mixture you left in the bowl with a whisk and then whisk in half a cup of cream. Use an electric whisk until firm peaks form.
Put this mixture into a piping bag with a fancy nozzle such as a Wilton 1M and then pip a generous swirl onto each of your desserts.
Finally, top each swirl with a chunk of chocolate and your desserts are ready to eat.
