Every time walking pass by this store, it’s always crowds there. Take a closer look, the owner uses the traditional method which melts the maltose and then mix with the freshly cooked and powered peanut.
Unlike the hard ones sold elsewhere, this type tastes quite soft as ‘Dragon Beard Crunchy Candy’ because you can stretch it into thin threads.
You can really enjoy the feeling of the candy melting in your mouth.
You can guess how sophisticated the process is just by the amazing taste of this peanut brittle. Malt would be soaked until sprout, and then left for fermentation after mixed with cooked sticky rice, to do so the invert syrup is generated to be heated to amber color.
It is said by the proprietress that the taste of maltose is the key.
The difference is they use 100% maltose while others may add granulated sugar. At first, peanut brittle’s only made for their family; they don’t sell until people ask. It can be added to dishes or serve directly to children.
Storage tips: best consume within 10 days, store in a cool, dry place for 15 days, 1 month if keep freeze (microwave 10 seconds before eat, cannot leave to defrost itself). Peanut brittle is given a nick name as ‘no tooth candy’ made only with maltose and peanut so that doesn’t have the smell of oil and would be suitable for baby (6-month old) and older people. The traditional process of making the peanut brittle does not contain any chemical substances, and unlike granulated sugar which is 3 times sweeter than maltose, there’s no need to worry about gaining weight! With the high protein in peanut while maltose is good for digesting, you may not be able to stop if have the candy together with tea.
Through the layering of maltose and peanut powder, this freshly made brittle can be easily stretched to a long thread.
