Truffles? In the Pacific Northwest? Oh, yes!
Rachel Belle spends a day meandering through the mossy woods of Snohomish County with the folks behind Truffle Dog Company. With the help of their keen-nosed canines, they forage for these much-coveted fungi lurking just below the forest floor. Not only will TDC take you on a truffle-seeking adventure, you can also work with them to train your dog to be your truffle-hunting accomplice.
We’ll learn why truffle foraging with dogs is the most environmentally sound way to forage; discover the biological purpose of a truffle’s intoxicating scent; and see how our local truffles stack up against European varieties that can fetch thousands of dollars per pound. After finding their fill, Rachel and the gang set up an outdoor kitchen and turn their freshly foraged (free!) truffles into a simple but delicious meal.
