This time, Chef Hiroshi Sasaki, the owner-chef of "Gion Sakaki" in Kyoto, introduced us to a dish using spring ingredients: Sauteed Sea Bream Marinated in Shio-koji With a Spring Vegetable Sauce.

10g light say sauce

50g rapeseed
50g butterbur
60g hosta (Hosta sieboldiana)
