The rum I think is actually just rum essence, no actual alcohol, just the aroma of rum, it's very common in desserts here 😃

in oras la mine se face savarina dupa reteta originala - care nu este romaneasca- a lucrat nepoata-mea acolo si savarina era cu rom alb si nu cu esenta de rom , rom-ul era amestecat cu apa si se punea peste savarina, da , în general se face cuesenta de rom dar daca se respecta reteta originala - si unele cofetarii o fac - savarina contine rom alb amestecat cu apa .

@@laura69271 Da, numai că e foarte departe savarina noastră de ..."baba au rhum" care într-adevăr se face cu rom , (băutură alcoolică). Rețeta originală nu e franțuzească cum s-ar putea crede. Ea este adusă la curtea Franței de soția lui Ludovic al XV-lea , Marie Leszczyńska, de origine poloneză. E de fapt o improvizație, adică bucăți de brioșă uscate , umezite cu rom pentru că ... aristocratele în vârstă ("babele"),, nu mai aveau ... dinți. ☺️ Asta e istoria acestui ... dulce. Variantă ulterioară la "baba au rhum" : acesteia i se pune și un moț de frișcă. Dar nu și dulceață de fructe. Reteta de savarina (originală) care se pare că totuși ne aparține , se prepară însă cu pesmet in loc de făină. Era preparată de brutari patiseri din pesmetul de pâine nevândută, uscată și măcinată. Restul retetei , cum îl știți. Pesmet fin in loc de făină + arome+ zahăr+ etc. După coacere in forme, se taie capac , i se pune MULTĂ frișcă și bineînțeles dulceață. Desigur , se insiropează foarte bine . Dar nu cu rom alcool , căci pe a noastră savarină o consumă si copiii. Daca cofetaria aceasta din film a preparat prăjitura cu rom alcoolizat e altă poveste. E numai o rețetă de savarina ... revizitată.

You might find Coliva at funeral ¨anniversaries¨ or at some churches in hollydays or sundays. Also on 5 november if you´re still in Romania they celebrate the ¨Mosii de toamna¨ (Autumn elders) where where they share food which always contain coliva.

Found out the international name of 'Bird's milk' as that's just the exact translation from Romanian, but it's called 'Floating island', the floaty stuff would be meringue and the liquid creme anglaise, which i found funny to sound so fancy considering my grandma that grew up in a rural area near Buzau knew to make perfectly

"international" could mean that a more powerful nation took the recipe from the original owners and popularized it with their own name. /mayba the original name was birds milk not floating island. Or maybe the recipe is so old that the original name was "hercules balls" and it got lost in the past.

@@ionutpopa5622 I mean, custard is English, the French even call it creme anglaise, but the word custard has Latin origins, and apparently the Romans did have a version of it. Early French/ English versions had sponge cake as the floaty things and Romanians don't bake the meringue they boil it. So yeah finding out who can be exactly credited for sweet floaty things in milk egg sugar mixture is probably impossible

"Lapte de pasare" is made from egg whites baten with a little bit of sugar and then boiled in milk.in the same milk we mix egg yolk with sugar an boil again. Is simple and tasty.no condensed milk.😉

Actually the dictionary says that "cofetărie" comes from the older Romanian word "cofet" (pl. "cofeturi"), meaning different sorts of sweets, candies. This word, in turn, comes from the (neo) Greek ko[n]féta, meaning, probably, the same. The word „cofet” is no longer in use, but "cofetărie" was here to stay. Currently we say "dulciuri” for "sweets” ("dulce" = "sweet" as a taste). Other related words: "prăjitură/prăjituri" = "cake/cakes" and "bomboană/bomboane" = "candy/candies".

"Papanasi" is great, love it! "Savarina" is very good, that spongy dough absorbs the syrup that's made of water lots of sugar and a highly concentrated essence of rum - not actually alcohol (but some might put actual alcohol in it) and the whipped cream is also good. I personally like "amandina" a lot being more chocolatey still with a rum taste depending on the recipe. Coliva is not found everywhere but I found at the hypermarket Carrefour - some make it if you ask, maybe found some already made.

it really is bird's milk :))) You bring sugar, egg yolk(s), vanilla and milk to a boil. The beaten egg white(s) will be scooped into the boiling milk/mixture, and submerged so that the egg white(s) will be cooked in this mixture. Can be served warm or cold.

Rum in romanian is "Rom" so, it is called Rumania, but in romanian language :). Cofetaria = cake shop. Some are called "cofetarie si patiserie" = cake and pastry shop

In bird's milk there are basically milk and eggs. The white clouds are made of egg whites beaten to a foam (like meringue), boiled in milk, floating in a sauce made of egg yolks slowly mixed in milk and boiled which thickens it up. Vanilla flavoured of course.

If you are still in Romania and you want to taste the dessert called "coliva" on Saturday, November 5, the "Saturday of the Dead" is celebrated and in all the churches in the country, people who have relatives or friends who have died bring home-made coliva to the church. Coliva is primarily for memorial service which happens at specific days after the death of someone but is also used for some holidays like Easter, Lent, Christmas and even New Year. I think you can probably buy it from religious stores but is usually home made. It tastes kinda like oatmeal but more rich, sweet, powdery, chunky and less liquidy.

Coliva is so yummy! Used to ask my late nan to make me it for me, even when it wasn't a funeral related event. Now I live in Ireland and will be going home for Christmas and mum will make it for me. You guys need to try it! ^_^

Haha, Coliva is a ritualic meal, served exclusively for funerary occasions, or commemorative for our deceased members of family. This is why you will never find it in restaurants etc If you really crave Coliva go to Church, there's a big chance you'll find some family commemorating someone they lost, God bless their souls! So, go for it! 😂❤

Savarina is my favourite too. A very good one you find in Brasov, at cofetaria Saray. Savarina, ecler etc are french influences, with a romanian twist. I love "ecler cu nesscafe" or coffee eclair. Savarina is made from a soft yeast dough, first baked and than cold soaked in a lot of rum flavoured syrup. It is topped with strawberry jam and a lot of natural whipped cream. The cream quality makes the difference.

Papanasi is usually served with more jam and sour cream than it appears on your video. I think you can get better papanasi in another restaurant, to be honest. No offense to the restaurant where you tried it. But every restaurant has its own twist to papanasi, at least look-wise.

The sweet you say that looks like lasagna, I used to eat a lot as a child. A version is to use rice instead of noodles and call it rice pudding. It has cottage cheese, sugar, raisins, eggs, flavours. At the cofetaria Marie Louise they had Indiana, I love that sweet, you must try! By the way, the rhum is just essence of rhum, no alcohol in the sweets. Well, maybe if you make them at home...

The word papanași may come from the Latin papa or pappa, which means 'food for children'. Papanași is doughnut-shaped with the doughnut hole on top. The dough is made with cottage cheese.Papanași are served covered in sour cream, and topped with sour cherries jam Papanași dough can be fried, as a "doughnut", or boiled, as a dumpling, like large gnocchi.

No cottage cheese in there. The Romanian "branza de vaca", is a lot more like ricotta. The mix is 1 part white flour and 1.3 part ricotta. Cottage cheese is way too moist gor this recipe.

Ok, let's take them one by one: Cofetărie vs Cafeteria. They have nothing in common. The romanian word comes from cofetar, which translates into pastry chef. Lapte de pasăre. This is a romanised french desert, ile flottante and it's made from egg and milk, the whisked egg whites are boiled and served in a custard made from yolks and milk. In Romania was a pretty popular desert during our childhood as it only needed eggs, milk and sugar. Savarine. These are the romanian interpretation of the french rum baba. Savarine are not usually home made, we only eat them in cofetării. We have a cofetărie în Bucharest specialised in savarine. If you love regular savarine, those will blow your mind. We also have a Eclairs specialised cofetărie in Bucharest. Colivă. Made at one's funeral or post funeral traditions. There are reinterpretations served in restaurants. I have a very, very good one in Bucharest. If you get back here and want a more modern romanian cusine experience, let me know and I will make myself available for a tour. The plum dumplings are most of the times homemade, but if you need to try them, come to Bucharest and we find a way :)))

Savariana is very popular in Romania. You can find them like anywhere where there are serving cookies / desserts. Even supermarkets sells them.. but those do taste less natural(ish) 😄 #chemicals / Homemade Savariana or one served at a good cofetăria.. are the ones to get. 👍

the "Bird's Milk" is just vanilla/egg custard with marshmallow floating on top. Not exactly Romania, but then again, w don't have many desserts. We borrowed from the neighbors, mostly from Turkey, Germany, France, Poland and Austria. Very recently we started "borrowing" from the Americans as well, with all sorts of deep fried stuff, including bananas, incecream becoming quite popular

Savarina it's soaked in some type of syrup ... and most of romanian cakes are not dry but have added syrup or rum essence to make them moist. Papanasi dough also contains cottage cheese .

Cofetaria sells cakes( prajituri) while cafes are about coffee. And home made cakes are different types than what you find in stores. Oh and the most popular and famous desert should be by FAR cozonac, not papanasi - papanasi is famous with tourists.

Always buy the expensive hand made cozonac, not the factory made one. The difference is huge! Go to a weekend peasant market and look up the desserts they sell there.

If you liked Pasta pudding with sweet cheese and raisins from the beginning of the clip. I recommend you to make this recipe of Pască without dough! We usually make it for Easter and it also contains dough, but I make it every week and I make it without dough. This is my favorite dessert. Ingredients: 6 large eggs 100 g of sugar 1 kg of cottage cheese 240 ml of milk (I use 200g of sour cream instead of milk) 100 g of melted butter 8 tablespoons of semolina 200 g raisins (You can also use something else. I also made it with cherries, strawberries, apricots or chocolate flakes. But if you use fresh fruit, you have to cut them into small pieces so that they don't sink and you have to put lemon juice on them while you cut them so that they don't oxidize) Between 6 and 12 small vials of 2ml vanilla essence from Dr. Oetker, I put 12 so that the taste is more intense. Optionally, you can also add the juice of one or two lemons. Method of preparation: 1. Preheat the oven to 180 degrees Celsius. Line a baking round shape with baking paper or grease it with butter. (I recommend baking paper) 2. Use a whisk to mix the eggs and the sugar. 3. Add the cottage cheese and mix well, together with the milk or the sour cream. Then add melted butter and semolina and mix again. 4. Add the raisins or the fruits and mix a little more. 5. Pour the pastry mixture into the baking dish and bake for about 60 minutes. (It says 60 minutes in the original recipe, but I burned it keeping it that long. My gas oven has 8 levels and I use level 3 to level 4 for 40 minutes and another 5 minutes only with the top flame from inside of the oven, the one used for roasting meat, to bake it a little on top.) 6. It can be cut after it has cooled down in the refrigerator, preferably the next day.

If we speak about french stuff I prefer Choux a la Creme. Smaller but I like it that way cuz it's also with less whipped cream. Savarina often comes with like extra whipped cream as we can also see in the video above. If I eat even 80 % of that whipped cream I start to feel kinda sick. Choux often has less whipped cream in comparison with Savarina. I did mention Choux a la Creme cuz for me they are very similiar 😄

Rum became omnipresent in Romanian sweets during communist rule when the only foreign products available were shrimps from Vietnam, and rum from Cuba. It's mostly not even rum that's used in sweets but some distilled essence. It's not alcoholic.

The sweet lasagna is actually what a Romanian traditional pie is like. "Plăcintă" in Romanian. When you say pie to a Romanian that's what he thinks of. The layers are not pasta, just home made dough layers. I like more the salty version, with salty cheese.

Hi guys, I am binging on your videos, I love your charisma and dynamic together, so lovely to watch you on your journeys. I am Romanian, my few thoughts: Savarina and ecclairs are not actually traditional, but have become popular probably starting with 19th century via French bourgeoise influence; savarina is also known as Rum Baba, invented by this French guy called Savarin in the 1700's and was innovative through the use of yeast, hence the lighter bouncy bread like texture - because without the yeast the dough would collapse when soaked with so much liquid : )) Coliva wouldn't be found in shops (to my knowledge) as it's more like a dish intrinsic to the Orthodox religious ceremonies of funerals; maybe see its purpose as a less holy and more gastronomically complex communion wafer (?!) The bird's milk, again not traditional per se but popular in Romania probably for a few centuries, it is literally the old school French Floating Island, or ile flotante, also dating back to 18th cc. I really hope you managed to find the plum dumplings as well (gombotz) and a variation on the papanasi, the boiled version, like golf balls rolled through sweet cinnamony butter roasted breadcrumbs - the papanasi dough, as also pointed below, has a good content of fresh sweet cheese. The gombotz dough is unique as the authentic one is with potatoes! Have fun! xx PS: 1. also, if again in a farmer's market, look out for Quince cheese (like a hardened quince reduction, texture of cascaval, Italians have it too), Magiun de prune (literally just plum reduced down for hours into a thick paste, no sugar), seabuckthorn berries in honey, pollen in honey, wallnuts in honey, rose petal jam, rosehip jam (a true revelation), pine needle syrup - these are not quite desserts but more deli foods/natural remedies but truly part of ancestral traditions 2. have you tried the aubergine salad (salata de vinete, more like a spread) and the diverse and ubiquitous Zacusca? Try the zacusca - it varies but basically a chutney with roasted peppers, aubergines, mushrooms, onions - I believe it's the essence of a preserved veggie spread 3. as you like cheese, Nasal cheese is a unique brie and... the most unique of All: Branza cosuletz - salty sheep’s cheese matured in a cylinder of cherry tree bark, spicy and resinous from the tree sap, found exclusively around Rucar/Brasov area - for me this cheese is like heavy metal, imagine it through polenta : )) ... and the list could go on..

Cofetaria Alice in Bucarest has coliva for sale, or you can get it for free almost every Saturday at an monastery, the monastery coliva it's better because it has more walnuts

Coliva isn't made with barley, but with "arpacas". Arpacas is a romanian basic food, produced by husking and refining the wheat, spelt, millet, barley. Mainly is wheat. Those are just other options, but rarely you get to see arpacas, produced from anything than wheat.

Eclaires came from France here. Savarina, which is a syrup infused soft cake, because of the specific moistness, is also a slang word for vagina. Also, nothing contains rum, but everything contains rum essence (concentrated liquid rum flavour) . Romanian deserts are awesome

The first dessert looks like a Jewish dessert called "noodle kugel" which is not overly sweet either. I haven't had it in years but my grandmother used to make it for the autumn holidays.

that "farmer cheese" is called quark cheese... I saw it translated on the packaging of "Dots" and a few other stuff that had "branza dulce" filling😁

savarina is very good, but it is generally considered a humble dessert compared to papanasi. it is usually the cheapest option in a cofetaria and to me it has sort of old school/communism cuisine vibes. compared to the mighty papanasi, with real cheese in the doughnut and real sour cream on top. Also, my favorite romanian desserts are biscuit salamy (salam de biscuiți - rum is a popular aroma here as well) and a chocolate fudge wrongly named homemade chocolate (ciocolata de casa).

There is no need to change the name of the country, rum is english for rom, in romanian...so, rom/România 😂 could be our new gastronomic emblem 😅🤗. The recomandations you received were very traditional, so "good job" to your guides.

Hello. I never liked papanasi, they are too heavy. I really like savarines, I hope you find a place where they make savarines with sour cream, they are the best dessert. Papanasi dough contains a lot of fresh cow's cheese, which is why it is denser.

oh and it does not matter if a desert has rom. everybody has desert, no matter the age. ur 8 and want salam de biscuiti ( has rom ) no problem. ur 7 and want ROM ( romanian chocolate u find in any store and has lots of rom ) u can have it.

Ecler and Savarine are France deserts. Papanaș is actually the only Romanian desert.

"Savarina" is a cake soaked in white rum- if they follow the original recipe Baba au ruhm - 😉, it's a cake for big boys and not for kids😉 Vergabeles it`s a type of food you eat between the meals, it`s not desers it is not a proper meal..it is something ... you just eat when you are not quite hungry ....i often make Vargabeles and i like it !!!!!

@@RaduRadonys ..daca e dupa reteta originala se face cu rom alb, nepoata-mea a lucrat într-o cofetarie din orasul meu si acolo faceau Baba au ruhm - savarina - dupa reteta originala , faceau si ptr.copii care continea doar sirop dar Savarina originala se facea - si înca se face acolo la cofetaria din centru - cu sirop ce contine rom alb . Savarina nu este specific Romaniei
